Bread in a Mug Master Mix (THM-S)

I have absolutely loved my Chocolate and Vanilla Cake Master Mixes, so I decided to try my hand at making a master mix for the Bread in a Mug!

Since this is a recipe in the Trim Healthy Mama book, I can’t list the recipe. But I can tell you what to do to make your own master mix!

To Make the Bread in a Mug Master Mix

Using the Bread in a Mug recipe in the Trim Healthy Mama book (pg. 265), multiply the dry ingredients in the recipe x8 (at least that is what I did so that it made a good amount of mix). Mix it all up in a 1 quart jar or bowl. Store this mixture in a covered container in the refrigerator or freezer.

To Make Bread in a Mug (S)

  • 1/4 cup Bread in a Mug Master Mix (be sure to mix a little beforehand to make sure all the ingredients are mixed well)
  • 1 egg
  • 1 tsp. butter
  • optional seasonings (onion flakes, garlic or onion powder, parsley, basil, etc.)

Mix all ingredients in a large ramekin and bake in the microwave for about 1 minute OR bake in a 350 degree oven for about 20 minutes.

Note: You can bake this dough in different sized dishes depending on what you are using the bread for.  I like to use a large ramekin, then cut the bread in half for a sandwich.

Yield: Makes enough master mix to make about 8 servings.

For Pizza: If using for pizza crust, add some Italian seasoning or basil and spread out on a microwave safe plate to bake. Works great!

For Pancakes/Waffles: Just mix in a little stevia powder, vanilla, and cinnamon. Fry as a pancake in a buttered pan or bake in a waffle iron!

    1. Hi Karen, The actual first Bread in a Mug recipe that the THM sisters had in their first cookbook had almond flour and ground flax, equal parts of each. If I remember right it was 2 Tablespoons almond flour, 2 Tablespoons ground flax, 1 teaspoon baking powder, dash salt, 1 egg, and 1 teaspoon butter. Then you can add some other spices if you want some flavor to your bread (like onion powder, onion flakes, garlic powder, etc.)
    1. Hi Sarah, I bet you could use some flax or chia meal and water to replace the egg. I know I have done that before in other recipes. I haven't tried it though, but give it a try!
