Recipe – Breakfast Egg Casserole

As I mentioned in this post, I am loving my new cookbook!  This is one recipe that I made from the cookbook, with a little adjustments by me!  It was so easy to put together…and so yummy!  If you wanted, you could also add some cooked sausage, bacon, or ham to the eggs for something different.  Enjoy!

BREAKFAST EGG CASSEROLE


4 tablespoons butter (2 T. on bottom, 2 T. on top)
8-10 slices of bread
10-12 eggs
salt and pepper
shredded cheddar cheese

 

Melt 2 tablespoons butter in a glass 9×13-inch pan (turn the oven on to 375 degrees to preheat and put the pan in while it heats…just until butter melts).

Once butter melts, remove pan from oven and break up about 4 slices of bread to cover bottom of pan.

In a bowl whip the eggs until blended, add salt and pepper to taste.  Pour over bread pieces in pan.

Break up about 4 more slices of bread and cover top of eggs in pan.

Melt the other 2 tablespoons of butter and drizzle over top of bread and egg mixture.

Sprinkle some shredded cheddar cheese on top of everything.

Bake at 375 degrees for 15-20 minutes or until eggs are done.

Serve with ketchup or maple syrup for toppings and some fruit on the side.  Yummy!
