Trim Healthy Mama {Caramel Pecans – S}

Candied and roasted nuts have been a part of Christmas for me for many years. My great aunt would always come on the train from California and bring all sorts of roasted, flavored, and candied nuts.  They were SO good!

This recipe actually came by accident.  I started out trying to make some white chocolate, then I sprinkled some chopped pecans on top.  It was SO good that I thought it would be fun to try to coat some pecan halves with the candy mixture. I’m not sure what it is about how all these ingredients taste together, but they taste like caramel pecans or praline pecans.  They are SO good!

Add this recipe to your holiday baking and have some yummy nuts to snack on for a real treat! Enjoy!

CARAMEL PECANS (S)

1/4 cup unsalted butter

1/4 cup coconut oil

Pinch sea salt

2/3 cup powdered Erythritol (plus a shake of NuNaturals Stevia Powder if you want it even sweeter)

2 teaspoons whey protein powder

1 teaspoon vanilla

2 cups pecan halves

In a saucepan, heat all the above ingredients except the pecan halves.

Bring to a boil stirring constantly.

Remove from burner and stir in pecan halves until well coated.

Spread Caramel Pecans out onto a foil-lined cookie sheet and place in freezer to harden.

Once hardened up, break up nuts and store in a covered container in the refrigerator.

  3. Do you think you could use just regular Stevia instead of the powdered stuff? I haven't bought any yet and I think I'm going to NEED these very soon! lol
    1. Hi Stephanie! You sure can. I used a coffee bean grinder to powder the Erythritol, but you could grind up some stevia too. I find the powdered sweetener makes for a smoother coating. Good luck!
    1. You could try making these without the protein powder and see how it goes. The protein powder adds protein to this snack, as well as making it creamy. It may still work ok though. Give it a try!

    1. Hi Michelle, I just used the coconut oil that doesn't have much coconut flavor - the LouAnna Coconut Oil from Walmart.
  5. Oh my goodness! I just made these for a group of ladies that come to my house every Wed. These are so amazingly delicious! My daughter makes pralines, and I thought, well, none for me. It isn't worth how I feel after eating sugar! But now I can have these! Thank you, thank you, thank you!
    1. Aren't they good Donna? I think they taste like pecan praline ice cream! I bet these would be good chopped up and sprinkled on some THM ice cream! Yum!
    1. I made these and took them to my parents on Thanksgiving (they are doing THM too). They loved them and it was nice to have something sweet to snack on during the day and not feel guilty!
