Trim Healthy Mama {Strawberry & Oats Muesli-E}

I am always looking for some more E meal ideas, as I tend to fill my days with lots of S and FP meals. This one is delicious and is headed into my THM recipe notebook for sure!  I hope you enjoy it too!

STRAWBERRY & OAT MUESLI (E)

1 T. raw almonds

1/2 cup rolled oats

1 T. raisins (raisins are higher in carbs, so you can totally eliminate them if you want or use Goji berries instead)

dash cinnamon

couple shakes of NuNaturals Pure White Stevia Powder

Pinch of sea salt

1/4 cup strawberries (fresh or frozen)

I used a small chopper that I have to make this instead of my big food processor.  It worked great for this single serving recipe and I didn’t have to dirty my big dishes!

Put almonds in a small chopper or food processor and pulse until chopped into small bits.

Add remaining ingredients and chop until crumbly.

Pour into serving bowl and top with some unsweetened almond milk.

Makes 1 serving.

  1. I was wondering how you measured out 1 Tablespoon almonds? After they are cut? I have raw whole almonds. They do not fit nicely in the spoon! LOL.
    1. Hi Jennifer, I measure the raw whole almonds before I put them in the chopper. I just use a tablespoon and scoop out a spoonful. It doesn't have to be exact, just however many fit in the tablespoon. Hope that helps!
    1. Hi Amanda, I usually just have this alone for breakfast. If you are wanting more protein, you could fix some egg whites along with it. But this usually fills me up.

    1. Hi Rachel, Glad you liked it! I almost fixed this for myself this morning, but decided on the Mud Slide Chocolate Muffin :). I love this recipe when I am wanting an E meal...yummy!
