Oatmeal Muffins

I made a big batch of Oatmeal Muffins this morning and thought I’d add this recipe to my site!  Enjoy!

3 cups rolled oats (old-fashioned oats – not quick oats)
1 cup buttermilk
2 cups milk
3 eggs, beaten
1 1/2 cups brown sugar
1 cup olive oil
2 tsp. vanilla
3 cups whole wheat flour (fresh ground is best!)
1 tsp. cinnamon
1 1/2 tsp. sea salt
1 1/2 tsp. baking soda
3 tsp. baking powder

In a large bowl, soak oats, buttermilk, and milk for about 15 minutes.

Then add the rest of the ingredients and mix well.

Fill greased muffin tins (or I like to use the silicon pans…no greasing at all!)

Bake at 400 degrees for 20 minutes.

Makes 3 dozen muffins.

    1. No, this isn't technically a THM recipe. I mostly make these muffins for my kids and wanted to get away from so much gluten. So even if you use gluten free flour, it isn't a THM friendly recipe.
  1. Could one use applesauce in place of the oil and if so, would it be the same 1 cup? Also, which GF flour did you use? Thank you, Sheri, ❤️🤗🙏
    1. I would think you could use applesauce. I know I have done that in regular recipes. I assume it would work in a GF recipe. For GF flour, I sometimes use Bob's Red Mill gluten free flour and sometimes just the Great Value WAlmart brand.
  2. Can I substitute regular salt and oil? I only have a $40 food budget per week and have to be able to feed 7 children and 2 adults with that so extra things like olive oil or sea salt just arent in my budget. If I can sub reg salt do you know how much I would use or would it be the same? Thanks so much! I LOVE your site!!!
    1. Hi Brandi! Yes you can substitute regular salt and any oil of your choice in place of the sea salt and olive oil. Just use equal amounts of each. These are yummy muffins too! Enjoy!
  3. Thanks for sharing this recipe. I made these this morning. These are really good, and I love big batch recipes. I don't think my oven runs hot, but at 400 for 20 minutes, the edges of mine got very dark (the kids said they were "burned," but they were just dark). For my second set of pans, I turned my oven down to 375 and cooked for 20 minutes, and they came out beautifully. I was using metal pans, sprayed with baking spray (flour/oil), since I don't have any silicone pans. I don't know if that made any difference. I just wanted to share my experience.
