Gluten-Free Party Mix

My friend, Terri, emailed this recipe to me a while back and I keep meaning to post it.  She said her and her husband LOVE this chex mix recipe and it does sound wonderful.  I need to make some myself.  My grandma always made a huge tin of chex mix for the holidays…how about you?  Want to try some?  Enjoy!

  • 2 egg whites
  • 2 Tablespoons soy sauce (try to use MSG free if possible!)
  • 1 Tablespoon water
  • 12 ounces almonds
  • 7 cups rice chex
  • 1 6-ounce package dried cranberries
  • 1/2 cup sugar in the raw
  • 2 teaspoon cinnamon
  • 1/2 teaspoon salt

Preheat oven to 250.  Spray a 15 x 10 baking pan (or 2 pans 9 X 13) with cooking spray.  Beat egg whites in a large bowl with wire whisk for 30 seconds until slightly frothy.  Add soy sauce and water, beat 30 seconds more.  Add almonds, cereal, and cranberries, stirring until coated.  In a small bowl combine sugar, cinnamon, and salt.  Sprinkle over party mix and gently toss to coat.  Spread on pan and bake for 1 hour.  Stir mix every 15 minutes.  Cool and store in an airtight container.
