Breakfast Cookies {Sugar/Honey Free!}

Recently I have been trying to cut back on all sweeteners, including honey.  So when my menu plan had Breakfast Cookies scheduled for yesterday’s morning breakfast, I decided to experiment!  We really liked the results…I hope you give it a try!

BREAKFAST COOKIES {SUGAR/HONEY FREE!}

  • 1 cup chopped dates
  • 6 T. water
  • 1/2 cup butter, melted
  • 1/4 cup buttermilk
  • 1 1/3 cups whole wheat flour
  • 1 cup whole rolled oats
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips
  • 1/2 cup raisins

The night before:

Mix the chopped dates and water in a bowl with a lid.  Cover and allow to sit overnight in the refrigerator.

The next morning:

In a large bowl, place the melted butter and the dates/water mixture.  Mash up the dates with a wooden spoon or spatula.  You want the mixture to thicken up a bit but still have some chunks of dates.

Add in the rest of the ingredients and mix well.

Drop by tablespoons onto cookie sheets.

Bake at 350 degrees for 15 minutes (shorten cooking time to about 10 minutes if you make smaller cookies..15 minutes is for very large cookies! I made smaller cookies and they only took about 10 minutes to bake). Let the cookies cool for a few minutes before removing them from the cookie sheet. Completely cool cookies on wire racks.

Yield: Makes about 12-15 very large cookies (or about 24-36 small cookies)

Note: My kids LOVED these and couldn’t believe we were having “cookies” for breakfast! They couldn’t even tell they didn’t have honey in them.  They were good enough to have the leftovers for dessert/snack later in the day!

    1. Hi Tara! I might do some experimenting, but I wonder if you could use oat flour instead of the whole wheat flour, and then add in some xantham gum (maybe 1/2 t.). I know I made some yummy oatmeal chocolate chip cookies using oat flour and oats. I bet you could do the same with this recipe. Maybe I'll try it the next time and post the recipe if it turns out ok. If you try this and it works, let me know!
