Oatmeal Breakfast Bars – With Leftover Oatmeal

Oatmeal Breakfast Bars

In a large bowl, cream the butter, honey, egg, and vanilla. Add in the oatmeal, flour, baking soda, salt, and peanut butter. Mix well. Stir in any “extras”.

Spread into a greased 9×13-inch baking pan. Bake at 350 degrees for 20-25 minutes.

  • 1/2 cup butter, melted
  • 1/2 cup honey
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups leftover oatmeal
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/3 cup peanut butter
  • 1/2 cup extras (raisins, chocolate chips, nuts, etc.)

Notes: These bars are so yummy for breakfast! They would also make a great healthy snack!

My above recipe is adapted from the original recipe I found here (this link no longer works).  These are delicious! You can make the original recipe, add 1 cup chocolate chips, or add 1/3 cup cocoa to make brownies. Yummy!

  1. I was tired of my oatmeal and am so glad I found this recipe!! I made this with spelt instead of whole wheat flour, added 1 flax egg and 1/4 cup flaxseed, halved the honey, and sprinkled in some frozen wild blueberries. Turned out beautifully. :-) Thank you!
  2. After finding this recipe I alway make extra cooked oatmeal so I can make these bars 😁 I change a few ingredients, I omit the egg and butter, replace wheat flour with almond flour and the honey with maple syrup 😋
  3. Great recipe! These squares are very tender and soft and slightly sweet. I used semi-sweet chips, because I knew the family would love them that way, but I will try raisins and nuts next time. Great way to use up the oatmeal that no one was eating! Thanks, Sheri!
    1. Sunbutter, WOW Butter and Pea Butter are all good nut-free substitutions in any recipe calling for peanut butter or another nut butter. There is no nut risk with the brands of these I use.
    2. I used Wow butter. It is a roasted soybean butter. Or you could use Sun butter which is made out of sunflower seeds.
  4. I made crockpot oatmeal and the kids wouldn't eat it, so I had to find something to do with it. This recipe solved that problem. To make it gluten-free, I used coconut flour instead of whole wheat. The kids loved these bars! Thank you for sharing this recipe.
  5. These were really good. I greatly decreased the honey because I was making them for my one-year-olds, and they don't need it sweet, and I substituted cooked quinoa for 1/2 cup of oatmeal. I like how the flavor of peanut butter doesn't overwhelm everything else. The babies were still in their high chairs when this came out of the oven, so I gave them some, and one kid ate it, which is as good as I can hope for. Have you made them with shredded apple, shredded carrot, or mashed banana? They seem like they'd be good additions, but I don't know what I'd need to do to compensate for the increased liquid. Next time I make them I'll try shredded apple, raisins, and cinnamon.
    1. Hi Jean! So glad you liked these bars! Wow, some of your suggestions sound yummy! I guess if the mixture seems too runny, you could probably stir in a bit more flour. Let me know how your experiments go!

    3. LOL I am glad someone else feels that way. It is so annoying when you have to read pages of stories to get to the actual recipe. If available, I just hit "jump to recipe" button without reading the story behind the posting. I wonder if some of them are made up. And those are the pages that take forever to load.

  8. I've been looking to an alternative to muffins with leftover oatmeal. They turned out pretty good. They taste good and have a slight nutty flavor from the wheat flour. I added chocolate chips to mine, I think next time I may try the brownies by adding cocoa powder.
