I absolutely love having pancakes and waffles for breakfast (or lunch or dinner) and was so excited when one of my readers came up with this little tweak to my Fuel Pull Vanilla Cake recipe. You can have these Low-Carb Low-Fat Pancakes and Waffles as a FP meal!
This recipe is the easiest to use if you have my Vanilla Cake Master Mix made up ahead of time and in the refrigerator or freezer. Using the mix, you can quickly whip up a single serving of pancakes or waffles and they taste SO good too!
Below you will find the recipe for making these pancakes and waffles using my Vanilla Cake Master Mix, as well as the recipe to use if you want to make them totally from scratch. Personally, I love having the mix on hand. It makes it so quick to make up a batch of pancakes or waffles for breakfast.
To keep this recipe in FP range, be sure to only use toppings that are low-carb and low-fat. I love to have a bit of 0% Greek yogurt smeared on top with some mixed berries and a little drizzle of sugar-free syrup. Yum! If you want to turn this into an E meal, add some E-friendly fruit on the side and just put some sugar-free syrup or THM berry jam on top. If you want to make this an S meal, smear with butter and sugar-free syrup and have some scrambled eggs on the side.

Low-Carb Low-Fat Pancakes (THM:FP)
- 1/4 cup Vanilla Cake Master Mix
- 1/3 cup egg whites
- 2 Tablespoons plain 0% Greek Yogurt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon butter extract (optional, but really adds flavor!)
Mix all ingredients in a bowl.
On a hot griddle fry 4 pancakes or make 1 large waffle in a waffle iron.
How To Make Without the Vanilla Cake Master Mix
- 1 Tablespoon oat fiber
- 1 Tablespoon coconut flour
- 1 Tablespoon Whey Protein Powder – Vanilla
- 1 Tablespoon Sweet Blend or Truvia (to taste)
- 1/2 teaspoon baking powder
- 1/2 teaspoon Gluccmannan
- dash salt
- 1/3 cup egg whites
- 2 Tablespoons plain 0% Greek Yogurt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon butter extract (optional, but really adds flavor!)
Mix all ingredients in a bowl.
On a hot griddle fry 4 pancakes or make 1 large waffle in a waffle iron.




i tried these as a pancake, i probably should have let them cook longer on one side before flipping….I think the waffle would have turned out a lot better? The pancakes were mosit inside….and flat. I will give it a whirl another time and try the waffle instead.
I like doing waffles better than pancakes. They just seem to turn out better. Pancakes are so fragile and tended to break up easier.
What is the FP number for a serving?
Hi Mattie, This recipe makes one serving, so whether you make a big waffle or a few pancakes, you can eat them all and still be a FP! Enjoy!

Hi Joyce, I don’t know the carb count right off hand, but it would be under the minimum for a FP meal, which is under 10g net carbs.
I’ve made these twice now, and while I think they taste great, mine always turn out thin and hollow. Sometimes when I open the waffle iron, they split apart and stick to the top and bottom of the iron, even though it is non-stick and I’ve sprayed it with coconut oil spray. Are they supposed to be that way or am I doing something wrong?
Hi Gail, I have found that the gluten-free flours tend to stick. I just make sure to spray the waffle iron good. It’s also easy to not cook it long enough, so sometimes letting is get a little crisp helps. Hope that helps!

Is the gluccmannan optional? Or can I substitute something else?
Hi Eve, You can sub xanthan gum in place of the gluccie, or just leave it out. You probably won’t notice that much of a difference.

It is yummy Sherah! I actually mashed the berries a bit and stirred in some Truvia to sweeten them. Yum!
