Applesauce Muffins

We love muffins at our house, so I decided one morning last week to try another new recipe. As always, I tweeked it to our liking and we really did like them! Muffins are a wonderful option for breakfasts. You can make a bunch at a time and freeze the leftovers for another meal. Enjoy!
Yield: Makes 2 dozen muffins
1/2 cup butter, unsalted
1/3 cup olive oil
1 1/2 cups Sucanat or organic sugar
2 eggs
1 teaspoon vanilla
2 teaspoons baking soda
2 cups applesauce (preferably unsweetened)
4 cups whole wheat flour (I use fresh ground hard white wheat)
2 teaspoons cinnamon
1 teaspoon allspice
1/4 teaspoon ground cloves
Instructions
Preheat oven to 375 degrees.
Cream the first five ingredients in a large bowl. Add in applesauce and baking soda. Mix well. Add remaining ingredients and mix well. Spoon into muffin tins, filling about 2/3 full.
Bake at 375 degrees for 20 minutes.
