Trim Healthy Mama {Coconut Dream Cake – “S”}

I absolutely LOVE coconut! I knew I needed to come up with a Trim Healthy Mama coconut cake/muffin that I could have for breakfast or dessert. And it had to be a simple recipe too.

Guess what?

After some experimenting I came up with a delicious, moist, coconut cake. I have eaten this for breakfast with some mixed berries and whipped cream on top. Yummy! You could also use these little cakes for shortcakes with fresh strawberries on top.  Give this one a try!  You are going to LOVE it!

COCONUT DREAM CAKE – (S)

1 egg
1 Tablespoon coconut flour
1 Tablespoon unsweetened, shredded coconut (I used finely shredded coconut)
1 Tablespoon Truvia (or other sweetener equivalent to 2 T. sugar)
1 Tablespoon unsweetened almond milk (vanilla or plain)
1 teaspoon butter
1 teaspoon ground flax
1/4 teaspoon chia seeds
1/4 teaspoon baking powder (aluminum free)

Spray the inside of a mug or small ramekin with some olive oil (I used a 6 oz. ramekin).

Add the egg and whisk well.

Add the remaining ingredients and mix up well with a fork.

Microwave for 60 seconds or bake in a 350 degree oven for 15-20 minutes (don’t over bake).

Once it is done baking, pop out of dish to cool. Slice in half onto plate and top with desired toppings.

Serves 1.

  1. Hi Sheri, I have been looking through your recipes and I was wondering which recipes you use your THM baking blend 'copycat' recipe. I just put together the blend and wanted to see what recipes worked well with it. Thanks!
    1. When I made the baking blend, I was thinking that I could use it in place of the THM blend. I haven't really tried using the blend in my FP cakes, but I have heard others who just replace the flours in the recipe with the baking blend and it works pretty good. I just tend to follow my recipes and use the baking blend for recipes in the THM cookbook. I guess I need to experiment myself :)!
  2. Are the chia seeds necessary or is there a substitute you could suggest? Thanks!
    1. Hi Rhonda, NO the chia seeds are not necessary, but just add a bit of crunch to it. Just leave them out and it will still work fine. Enjoy!

  5. This was SO YUMMY!!! When I saw this, I had to make it. Of course, after I indulged I realized that it was not a FP and was a S. I had had an E supper. Oh well! Totally worth the cheat to try it! Definitely making this to have on hand when I go away for the weekend. I have been on the THM plan for a month. Started at the beginning of a busy month, but even though I have made mistakes I have lost 4 lbs. :-)

    1. Hi Kristina! If you look at the recipe, I have baking instructions for the oven. Most of the cakes/muffins can be baked at 350 in the oven for about 15-20 minutes. Hope that helps!
  6. Just tried this and it was super yummy! I'm wondering if this could be used as an S dessert? Or just for breakfast and snacks? Do you know?
    1. I would think you would want to be eat this mostly as a meal in itself, and as a dessert sometimes. A snack would probably be ok sometimes too. So I guess my answer is that it could be eaten for both a meal and as a snack or dessert...but not as a dessert too often. Just enjoy it!
  7. This sounds delicious, Sheri! I'd like to make a larger batch, though, since we have four of us in our home eating the THM way, so I think I'll multiply the ingredients by 4 or 8 to make more! :)
    1. Hi Julianne, I want to do this too, but haven't tried it yet. I bet you could do it as long as you used a big enough pan so that the batter wasn't too thick in the pan. I think this would be delicious to use as a shortcake with fresh strawberries and whipped cream. I bet it would be really good with some pudding on it too!
  8. Hi sherri, can you make your own coconut flour by just taking coconut through a ninja blender or food processor? I just did that with my flax, almonds, and oats. Thanks
    1. You can even add some other flavor extracts for more flavor..I'm thinking butter, vanilla, rum, coconut, etc. Experiment!
