Trim Healthy Mama {Coconut Dream Cake – “S”}

I absolutely LOVE coconut! I knew I needed to come up with a Trim Healthy Mama coconut cake/muffin that I could have for breakfast or dessert. And it had to be a simple recipe too.
Guess what?
After some experimenting I came up with a delicious, moist, coconut cake. I have eaten this for breakfast with some mixed berries and whipped cream on top. Yummy! You could also use these little cakes for shortcakes with fresh strawberries on top. Â Give this one a try! Â You are going to LOVE it!
COCONUT DREAM CAKE – (S)
1 egg
1 Tablespoon coconut flour
1 Tablespoon unsweetened, shredded coconut (I used finely shredded coconut)
1 Tablespoon Truvia (or other sweetener equivalent to 2 T. sugar)
1 Tablespoon unsweetened almond milk (vanilla or plain)
1 teaspoon butter
1 teaspoon ground flax
1/4 teaspoon chia seeds
1/4 teaspoon baking powder (aluminum free)
Spray the inside of a mug or small ramekin with some olive oil (I used a 6 oz. ramekin).
Add the egg and whisk well.
Add the remaining ingredients and mix up well with a fork.
Microwave for 60 seconds or bake in a 350 degree oven for 15-20 minutes (don’t over bake).
Once it is done baking, pop out of dish to cool. Slice in half onto plate and top with desired toppings.
Serves 1.
