It has been a fun journey with Trim Healthy Mama and I love how easy it is sometimes to convert your favorite recipes so they are THM friendly. Here is one of those recipes!

When I was growing up, many evenings my Dad would whip up some sort of dessert or snack for us to eat. No-Bake Cookies were one of our favorites! It was also one of the first things I learned to make on my own when I was first learning to cook in the kitchen. So it isn’t surprising that No-Bake Cookies have held a very special place in my heart (and my stomach!).

When I started Trim Healthy Mama, I decided to take a look at some of my own favorite recipes to see if I could make it THM friendly. When I pulled out my No-Bake Cookie recipe, I knew this was one that I could convert. I gave it a whirl and loved the result!

These Fudgy No-Bake Cookies are quick to make and work well keeping in the frig or freezer to have on hand for a quick snack. Enjoy!

Ingredients

Instructions

  1. In a small saucepan over medium heat, melt butter or coconut oil, cocoa, almond milk, Truvia, defatted peanut flour, water, and sea salt. Bring to a boil and allow to boil, stirring constantly, for one minute.
  2. Remove from heat and stir in vanilla and oats/coconut.
  3. Drop by tablespoons (I used a small cookie scoop) onto foil.
  4. Refrigerate to harden, then store in covered container in refrigerator.
  5. Makes 16 cookies.
  6. To keep this as an "S" snack or dessert, you can have 2-3 cookies! (If you use 1/2 coconut or all coconut, you can have 3-4 cookies to stay in "S" territory!)

  1. I do not have peanut butter powder on hand. Can I use peanut butter and leave out some of the butter?
    1. The peanut powder and water is the replacement for peanut butter. So I would replace the powder and water with the peanut butter and keep the full amount of butter in there!
    1. I think that Pyure is similar to Truvia, so you would use the same amounts. Here is a good conversion chart that can help! https://simply2moms.com/low-carb-sweetener-conversion-tables/
  2. Would there be any way to make these an E using all oatmeal? Not sure how to replace the butter. Believe rest of ingredients are all ok as an E.
    1. I'm not sure how you could make it an E with the butter in there. I don't think you could do that with this recipe. If you want to use all oats, just limit the number you have. Hope that helps!
  3. I don't have any Trivia on hand but I have Gentle Sweet. What amount would I use? I couldn't find a conversion chart anywhere for Trivia to Gentle Sweet, just 'sweet blend'. Is that the same?
    1. Hi Evelyn, Gentle Sweet is the same as Truvia, so you can just use the same amounts for both! You are going to LOVE these cookies! They are so good!
  4. So I followed the recipe exactly. They are so sweet. To much really. And have an after taste. What can I change?
    1. Hi Ann, If you find that it is too sweet, just use less of the sweetener. I love mine nice and sweet :)! As far as the after taste, that is probably the sweetener. You may need to just experiment with using some different sweeteners and see which you like best. Hope that helps!

  6. "rolled oats". what is rolled oats? is it old fashion? did you use half cup oats with half cup coconut or 1 cup only oats? would it be in S category no matter how much oats are used?
    1. Hi Rabia, Rolled oats is also called old fashioned oats. I usually use 1/2 cup oats and 1/2 cup coconut to cut down on the carbs a bit more. It would still be an S no matter if you used all oats, you just have to be more careful how many you eat at one time. That is why I like to use more coconut so I can have a couple more!

    1. HI Sandy! So glad you are liking this recipe! Hint: if you can't keep yourself to 2 or 3, just use all coconut in the recipe! The only reason you have to watch your limit is because of the oats in them. Too many oats will move it into crossover territory. Enjoy!
  11. So I am trying to find out is it ok to leave out the peanut flour my son has allergies to peanuts? I am going to make a batch of regular and know they are going to be great can't wait!!
    1. Hi Maria, You sure can leave the peanut flour out. You could sub almond flour instead or just leave it out altogether. They still turn out great! Enjoy!
  12. My daughter tried making the fudgy no bake cookies. The ingredients were so thick (before oats added) - how do you get them to "boil"? We checked the ingredients 3 times to see if we made a mistake. Followed it exactly except we used 3 T of Gentle Sweet instead of Truvia. We took 3-4 out of pan, then added lots more almond milk (3-4 T?) before we made the rest Is there some mistake in the recipe, and if not, how do you boil the "paste"? They did taste good - just really gooey. Thanks!
    1. Hi Marcia, I'm not sure why it was so thick. You should have a pretty runny consistency with the butter, water, almond milk, and the Truvia, cocoa, and peanut flour. You have to let the butter melt of course. I've made these cookies many, many times and never had them turn out like that. Maybe try melting the butter or coconut oil first, then adding the other wet and dry ingredients and see if that works better. Let me know!
      1. I'm so bummed.:( Mine did the same thing and do not have the consistency that a regular no bake cookie has. Did I do something wrong?
        1. Hi Jennifer, I am not sure why they did not turn out right. Were they really thick like Marcia shared? If it is really thick for some reason, you can always add a bit more butter or almond milk. But just make sure you are following the recipe exactly. I have made this recipe dozens of times and they are nice and gooey, then harden when refrigerated. Good luck!
          1. It happened to me too. I was using Gentle Sweet instead of Truvia, though. I’ll try again with Truvia and see if it makes a difference. The other thing is I make my own Almond milk and it’s really mostly water. So maybe that causes the thickness.

  15. I just tried making these and when I was stirring/boiling the chocolate mixture, the oil completely separated from the chocolate. Any idea what I did wrong? I'd like to try making them again but I don't want to risk ruining another batch and throwing away more ingredients if I don't have to. Thanks!
    1. Hi Melanie, I'm not sure why it separated, but I wouldn't worry about it. I wouldn't even worry about actually boiling the mixture. I usually just get it so the butter or coconut oil is all melted and mixed with the cocoa, sweetener, and peanut flour, and then remove from heat and mix in the oats and coconut. Even if it separates, once you mix it all together with the oats and coconut it won't matter. I hope that helps!

    1. Hi Sherri! So glad you liked the no-bakes. I wonder if you just poured the chocolate mixture into a foil lined pan and partially freeze it or put it in the refrigerator if that would work. It should set up when it gets cold, so I don't know why it wouldn't work. Let me know, I'd like to try it too!
  18. I am wanting to make these and maybe it is just late but I use sweet blend and having a hard time converting measurements. How much sweetblend would you use instead of Truvia. TIA
    1. Hi Chris. You usually use half the amount of sweet blend that it calls for Truvia. So if the recipe calls for 1 cup Truvia, use about 1/2 cup of sweet blend. I usually use a little more than that though..I like my sweets! Hope that helps!
  19. I used 1/2 toasted coconut and 1/2 rolled oats, and used protein powder instead of the peanut flour.......YUMMY!!!!
    1. Hi Rose, I don't see why you couldn't, it is just that using Truvia or the THM Sweet Blend adds more bulk to the cookies. Of course, you will use just a little of the powdered stevia. I would just taste test the cookies before scooping them out onto the foil to harden. Hope you like the recipe!
  20. Hi Sheri! I was wondering if you have tried replacing butter/coconut oil with MCT oil? I think I'm going to try this. Hopefully it'll turn out! :o)
    1. Hi Jessica, No I have not. Does the MCT oil harden at all when it cools? That would be the only thing I would think of why it might now work. They not set up very well. I guess give it a try and see!
      1. No, I don't believe the mct oil hardens at all. Maybe half mct oil and half butter or coconut oil and no water? I think I still want to try it. I've read so many good things about mct oil.
    1. You can use PB2, but if I remember right it has sugar added to it. So just keep that in mind. You can also just leave the peanut flour and water out of the recipe and it works great that way too. Hope you enjoy them!

  22. I just made these, but with hemp milk because that's what I had sitting out, and added a tiny bit of run extract that I had sitting around (it was basically gone)... then I accidentally dumped a huge helping of my hemp protein powder in it..... lol needless to say it was amazing! Thanks!!
  23. What is defatted peanut flour? I was wanting to make the fudgy no bake cookies but I don't have that. I have almond flour and coconut flour. Thank you !
    1. HI Shannon, If you go to my THM Shopping List page (https://sherigraham.com/sheris-trim-healthy-mama-shopping-list) I have a link to the Defatted Peanut Flour on Amazon that I use. If you don't have that, just use the same amount of peanut butter (the natural kind of possible) and omit the peanut flour and water in the recipe. I hope that helps!
  24. I am starting my 4th week of THM and this is only the second dessert I have made. I am just amazed at how good they taste! Thank you so much for sharing the recipe and all your helpful advice. I've made so many batches of the no bakes with sugar, for my family in the past and especially when I was a frat house cook. Then, I made the recipe multipled by 5 or 6. I like this little tasty healthful recipe much better! I used 1/2 oatmeal and 1/2 coconut. I got 18 cookies using the smallest Pampered Chef cookie scoop.

  26. Hi Sheri! I posted it a link to your site on a THM group, and members were concerned that it might be a crossover due to the carbs in the oats? I figured it was ok if you kept your portion size under control. ;) Thoughts? Thanks! I'm def. going to try more of your recipes! :)
    1. Hi Sonia, Yes, especially if you use all oats, you need to limit your portion to 2 cookies. If you use half oats and half coconut, then you can have 3 cookies. But yes you are right, because of the oats you need to be careful not to overdo! Some have used all coconut and like that too. If you do that, you can have as many as you want :).

      1. Hi Emily, If you use zylitol instead of the Truvia, you will need to use twice as much (or 1/2 cup). Xylitol is not as sweet and can be used cup for cup as sugar, so you'll have to sure more in this recipe. Hope that helps!
  28. Hi Sheri, if you have a chance could you tell me maybe 2 or 3 more THM desserts that you love from your blog or the book. I have tried several things but have only found a few that are all around family fav's. Your cookies are #1 and then we like a milk chocolate PB version of skinny chocolate that I found on a website called Lighter Life or Simple Life??? We also really like the chocolate pudding from the book ( as long as I don't but too much glucci...yuck). My 9 year old has T1 Diabetes so these low carb/no sugar treats are wonderful for her blood sugar. Thanks so much Sheri and no rush. If you are too busy, totally understand!!!
    1. Hi Mandy, Besides the no-bake cookies, my fuel pull cakes are really yummy - especially the chocolate cake! You could double or triple the recipe and make cupcakes or something with it and your kids will love them. I also love the ice cream recipe. The one in the book is awesome or you can try mine which whips up faster. I hope that helps!
  29. Sheri, just wanted to say thank you for this recipe. These are awesome! Have been doing THM faithfully since Jan.1 and these are THE BEST treat I've tried so far. Made these as a Valentine treat for me and my husband. Huge hit. Already made a second batch for my kiddos. Do you ever double the recipe?

  30. The regular version of these I've always made don't have any peanut butter as I don't care for peanut butter. Do you think these would work okay just leaving out the pb powder or does that do something to the consistency causing them to set up properly? If I leave it out should I also leave out the water?
    1. Hi Shyla, Yes you can just leave out the peanut flour and the water. They still taste great like that! Enjoy!
  31. Can I use xylitol & will they still set up right? I don't like any of the other substitutes.
    1. Hi Kristy, Yes, you can use Xylitol in place of the Truvia. If I am remembering right, I think Xylitol by itself is not quite as sweet as Truvia, so you may need to add a bit more. What I would do is just mix them up and taste test. Add more if you need it more sweet. I hope you enjoy these! I LOVE them!
    1. Hi Amy, I use a little cookie scoop that is about 1 Tablespoon in size, if that helps. I made these cookies bigger before THM, but making smaller cookies makes me feel I am having more when I can have 3 :)!
  32. I just maxed these and mine are so dark. Almost black and the mixture in the pan started to clump. Did I do something wrong?
    1. Hello! The mixture will be thick after you mix it up. I use a cookie scoop to scoop out tablespoon sized balls and put on a foil lined pan to harden in the refrigerator or freezer. As far as being almost, that may depend on the cocoa you use. If you use dark chocolate cocoa, then the color will be darker. I just use the regular baking cocoa so they are dark brown. Is it possible you used too much cocoa too? Just taste test the batter out of the pan to see. It should taste good...if it is bitter you may have used too much cocoa. Just give them a try..these are SO good!
      1. When i made these, the chocolate separated when it started to boil. It was kind of oily looking. I didn't boil the entire one minute. I took it off the heat and let it slightly cool before adding the vanilla, oats and coconut. They were great!!! But should I have let it boil for a full minute, is it supposed to separate like that?
        1. Hi Amy, I don't know why it separated like that! Glad they still turned out good :). You don't have to worry about boiling for a whole minutes. I usually never do. It really is to just get the sweetener dissolved and to thicken up the mixture some. I sometimes just stir until it starts boiling and take it off the burner and finish the recipe from there. Hope that helps!

I haven't tried anything but the Walmart brand and other grocer brand of Stevia (like Truvia for the most part, just generic), I was going to by the NOW brand of the Stevia Extract Powder, but I'm leery it will be the same and costs so much. I thought the Nunaturals may have a filler issue now? I just am confused by all the stuff. I didn't want to do the xylitol due to having a dog. I do appreciate the encouragement.
    1. I think I read that the NOW brand of stevia powder is a good option now since the NuNaturals changed things up a bit. I still have the "old" NuNaturals (a big 1 lb. jar), so I am still using that up. Yes, the stevia powder is expensive, but it lasts a long time. You don't use very much at all to sweeten things. For example, a few shakes can sweeten a whole 2 quarts of tea! Just keep trying until you find something you like. I personally really like the Erythritol mixed with the NuNaturals to make my own homemade Truvia. I think that tastes better than the storebought Truvia. But that's my opinion. We all have different taste buds ;). Wishing you the best!

Well i think i already messed it up...i used 1/4 cup pb and then the water, wasn't thinking the water was used for the peanut flour. oh well. i also have no Truvia, just generic packets, so to make the amounts required, it was 24 packets :( At first taste it was bitter, so I don't know if i'll like when they firm up. I feel like if I could just get the Stevia thing under control and find something I like than I would be on my way to success.
    1. Rachel, adding the water shouldn't hurt anything. As far as sweetness, have you tried the NuNaturals PUre White Stevia Powder? It is really concentrated, but works great. I use it to make my own Truvia. I use 1 cup Erythritol and 1/2 tsp. NuNaturals Stevia Powder to make it. Do you not like Stevia? Not all Stevia products are the same either and taste different from what others have said. Keep trying until you find something you like. You'll get there! It just takes a bit of time to figure it all out.
    1. In this recipe, I was more concerned with keeping the carbs down to keep this in S territory. So there is no problem if you want to use peanut butter instead of the peanut flour and water. As far as how much, I would say 2-3 Tablespoons. Enjoy!
    1. Hi Jeanetta, Powdered milk isn't on "plan" with THM. I am pretty sure it is higher in carbs. Almond milk is used because it is low in carbs and fat. Hope that helps!
  35. Hi, sheri, These look wonderful! Can I sub olive oil for the coconut oil? I am not sure if olive oil is more fattening than coconut oil, but it seems like I have read it somewhere.
    1. Hi Jeanetta, I don't think olive oil would work. Coconut Oil hardens when cool and olive oil won't do that. So I don't think olive oil will work. Butter would be a better option.

  37. This is very close to my no bake lactation cookie recipe! I use actual nut butter though, so no additional liquid is needed and I added flax or chia seed (sometimes both) & Brewers yeast. Sometimes walnuts too! Yum!
  38. These are fantastic!!! They are fudgy and sweet and feel like a cheat! I used half coconut oil and half butter. I also cut the truvia back to 1.5 T and the dark chocolatey flavor really comes through. Thanks so muc for the recipe!

  39. OK - so these are the only THM dessert I have made and LOVED....everything else was "meh" for me but I have a hard time limiting how many of these I eat! Used almond flour instead of defatted peanut and they came out fine. Thank you!
    1. Hi Tracy, I love these no-bake cookies too..and it is hard to limit it to the 2-3 cookies per serving. That is why I use half shredded coconut and half oats to cut down on the carbs a little so I can have more :).

  42. This is the first THM friendly dessert I've made and my husband is literally licking the bowl. I cannot wait to try the cookies themselves. I did use powdered xylitol instead of truvia since truvia makes my husband sick. So excited.

  44. Found these on the THM board and then on pinterest. I used peanut butter in place of the defatted peanut flour and used all erythritol (1/3 cup) and they are fabulous! They taste like dark chocolate no bake cookies to me! I wasn't paying attention and I made them with butter instead of trying them with coconut oil but since they taste so good I'm guessing that's just fine! Thanks for a great recipe!!
    1. So glad you liked the recipe! You can sub peanut butter, but the fat content goes up when you do that. The last time I made these I used 1/2 cup oats and 1/2 cup shredded coconut. They were SO good and dropped the carb count a little too! My husband wants me to make a variation with no peanut butter in it, and adding in some almond extract and all coconut in place of the oats...sort of an Almond Joy version. I'm trying that next!       1. Have you tried it without peanut butter yet? I'm not much a fan of the taste of peanuts, so was wondering if I could totally skip the peanut flour, or sub in protein powder instead? I haven't tried much THM baking yet so I am a little nervous experimenting on my own!

I was thinking about these no bake cookies, since my daughter just made some last week, but I didn't eat any since they weren't the THM way.     1. Hi Michelle, Yes, my kids did eat these. In fact, next batch I am going to have to hide them so I can have some ;). I think that would work fine swapping out sugar for the sweetener, and using regular milk for the kids. Enjoy!
    2. I'm using KAL brand stevia, and it's definitely one of the better stevia options. As long as you don't use too much, you shouldn't have to worry about bitterness. It's the other brand recommended most often on the FB group. :)
      1. I haven't tried the KAL brand yet. I bought a big 1 lb. container of the NuNaturals so I have a while before I run out. Thanks for the tip though..I'll keep KAL in mind!
      2. Rebekah, thanks for the information about KAL brand stevia. Like Sheri, I have a lot of NuNaturals to finish before I'll be buying anything else, but I'll file this information and continue to keep my ears open about what's being recommended.
  46. Thanks Sheri. Do you make your Truvia by mixing together Stevia and Erythritol? If so, do you use the Nunaturals for your Stevia? Also, I am reading on the THM page that the Nunaturals is now bitter - if you get the newer product. Have you tried any other brands?
    1. Yes I do make mine with Erythritol and NuNaturals. I bought my NuNaturals before they made the changes, so I don't know about how it tastes now. I haven't tried any other brands now. Maybe post on the THM facebook group and see what others have tried. When I run out of my big bottle of NuNaturals I'll be doing the same thing :).
  47. I LOVE no bake cookies. Can't wait to try this version. Do you make your own Truvia? I have read about it but am not sure how to do it. Right now I am not sure that I have enough Truvia for this recipe. Guess where I will be going today!

  48. The super-duper-sugary-crossover version used to be a favorite of mine...can't WAIT to try these!
    1. You are going to LOVE these! They are still sweet and peanut buttery and chocolaty...yummy! I like them better when they are still kind of soft. When you refrigerate them they get hard, but keep better that way. So..my recommendation is to set a couple out on a napkin and allow to soften a bit before eating :).
      1. After being refrigerated, I just keep mine on the counter, and after the oats have soaked up some of the moisture, they are soooooo fudgy! Delicious! I may cut back a bit on the truvia tho next time... these were REALLY sweet! Oh - and I used peanut butter instead of the defatted peanut flour, but I cut the amount of water in half to accommodate the difference in liquid. It worked out just fine.
