Chocolate Mud Slide & Berries – S

This is a breakfast that I fix quite often…Chocolate Mud Slide & Mixed Berries.  It is SO good!  This is another quick mix and cook for 40 seconds in the microwave, then top with some thawed frozen mixed berries.  Yum!

1 egg

2 tablespoons ground flax

2 tablespoons cocoa

2 tablespoons Truvia or similar sweetener

1 rounded teaspoon baking powder

pinch of sea salt

1 tablespoon water

1 tablespoon coconut oil

Mix well in a mug. Microwave for 40 seconds. It will be very soft and gooey. Pour out of mug and top with berries and a bit of cool whip. Yum!

  2. Hey Sherri, I have the book and am looking at page 257. For the recipe for the volcano mud slide. Do you omit the almond flour from the original recipe and sub in more cocoa powder and flax seeds? I am trying to figure this recipe out and the way it is written is just confusing. Thank you again so much for all your THM recipes!
    1. Hi Angela! Yes, you have it exactly. You use 2 scant T. flax seed and 2 T. cocoa powder. No almond flour in this recipe. Then don't forget to add in the 1 T. water! I love this recipe and make it often with berries and some whipped cream. It is SO good and filling! Enjoy!

        1. I'm sorry. This recipe was one from the very first THM cookbook. I think I remembered it :)! I added the instructions to this post. I just made this today for breakfast! Enjoy!
    1. This recipe is found in the Trim Healthy Mama book under the breads and muffins chapter. It is the recipe for the chocolate muffin in a mug, with the tweaks the book gives adding some water and not cooking as long. I think the book calls it Volcano Slide Muffin or something like that.
