Trim Healthy Mama {Strawberry Cake – FP}

After coming up with the Fuel Pull Lemon Cake Delight last week, I had the idea of making a strawberry version.  I love strawberries, especially in the summer when we can get fresh strawberries!  I can’t wait for summer to come again so I can have this cake with some fresh strawberries.  But in the meantime, enjoy this yummy Fuel Pull Strawberry Cake, even if you have to use frozen strawberries. I hope you enjoy this one as much as I do!

STRAWBERRY CAKE (FP)

  • 1 tablespoon oat fiber
  • 1 1/2 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Glucomannan
  • 1-2 tablespoons Truvia (I found that this cake didn’t need quite as much Truvia, so taste test and adjust accordingly.)
  • dash sea salt
  • 1/2 teaspoon strawberry extract
  • 1/3 cup egg whites
  • 2 tablespoons mashed strawberries
  • 1/2 teaspoon lemon juice

Mix all ingredients in a small bowl, then pour into two small (6-oz.) ramekins.  Bake in microwave for 1 1/2 minutes. (When I made mine that is pictured above, I used a larger ramekin and baked it for 2 minutes in the microwave.)

If you want to bake them in the oven, grease your dishes first, then bake at 350 degrees for about 15-20 minutes. I noticed that when I baked them in the oven they didn’t raise as much as when baked in the microwave..just an FYI!

Makes 1 serving (2 small cakes OR 1 larger cake)

Topping Ideas:

I put a little fat free Reddi Whip and more mashed strawberries on top.

Top with some sweetened Greek Yogurt and fresh strawberries.

  1. I thought I had done something wrong because I made this in the microwave for 1 and it was amazing. So I thought, I'm going to x4 this and bake it in the oven and it will be even better.. nope, didn't rise nearly as much! I'm glad to know I'm not the only one.
  2. Do you have the nutrition breakdown on your desserts? How many carbs, fats, etc? You're stuff is amazing!!
    1. Hi Terri, I did not figure the nutritional info on all my desserts. I do know that I figured it when I created the recipe, and the numbers made it a FP recipe. This is an amazing cake, especially this time of year when you can use fresh strawberries!

  5. This was fabulous !! It came closest to what a cake should taste like to me than any other I have tried.. But.. I misread the oat fiber for oat flour, will this change it out of the FP status? I didn't have strawberry extract and used raspberry instead, oh yum !! I was wondering.. could you make a full size cake with this and frost it with say strawberry cream cheese frosting or some kind of strawberry icing? I now it would change the status from an FP but it would be so darn delicious as I said it was closet to a cake texture than any I have tried thus far.. Awesome job !!! If you haven't created the full size cake can you please consider it ? I am not good at creating, I leave it to the professionals.. lol
    1. Hi Billie, If you use oat flour, then it moved it into an E dessert because of the oats being high in carbs. Yes, you most likely could multiply the recipe and make a larger cake. I can give it a try and see how it goes. Were you wanting a 9x9 or a 9x13 cake? Let me know and I'll see what I can do in creating a recipe for it ;).
        1. I think she meant she would like either a master mix or a recipe for a full size cake in either size pan? I would like either of those, also!! I finally made this today but subbed 1 tbsp strawberry protein powder & 1/2 tbsp coconut flour since I didn't have strawberry extract. It was wonderful & moist but overflowed my bowl in the microwave!☹️Can you come up with a master mix with either coconut flour or protein powder?
          1. Hi Nikki, I wonder if you could use my Vanilla Cake Master Mix, and then just sub strawberry extract for the vanilla and butter extracts. Then mix in some mashed up strawberries to the mix (as well as the egg whites). I don't know why that wouldn't work though. The vanilla cake is really good, so I bet adding the strawberry extract and some mashed strawberries would turn it into a yummy strawberry cake!   7. I made this tonight for my husband and myself. It was so good! I used a recipe I found on Pinterest for a strawberry topping and also put some whipped cream on too. It reminded me of a strawberry shortcake. Thanks for this recipe. We will be having it again soon. Even my hubby, who still eats sugar like it. I didn't have strawberry extract, so used butter extract instead. It was still delicious.
  8. help! I tried this and I didn't have strawberry extract and I used vanilla extract instead. tasted terrible and was yuckily doughy. is it really just the messed up extract or maybe I messed something else up??
    1. Hi Emily, It may have been a combination of not enough sweetener, not cooking it long enough, and not having enough strawberry flavor. It shouldn't have been doughy at all. If you don't have strawberry, you can use something like banana. Try it again and let me know if you still have trouble with it, ok? Oh..you also may need to cook it in two smaller dishes instead of a big bowl. That may help it cook better. Let me know!
    1. Hi Stephanie, Oat fiber is used in the Fuel Pull recipes because it has no fat and no carbs. You can find it online here: https://www6.netrition.com/lifesource_oat_fiber_page.html. Most people order it online because you can't find it locally. Hope that helps!
