Sheri’s Granola

I thought I would share our favorite granola recipe this morning!  I hope you enjoy it!

Sheri’s Granola

Mix the following ingredients together in a saucepan and bring to a boil:

  • 1/2 cup butter
  • 1/2 cup coconut oil
  • 1 cup honey or agave nectar
  • 1 T. vanilla
  • 2 T. molasses

In a large bowl, mix up the following dry ingredients:

  • 11 cups rolled oats
  • 1 cup chopped nuts (I like almonds)*
  • 1 cup dried coconut*
  • 1 cup flax seed, ground
  • 1 T. cinnamon

*  I put the raw almonds and the unsweetened coconut in my food processor and chop until they are in small pieces.  My kids seem to eat the nuts better when they are in smaller pieces.

Pour the hot syrup over the dry ingredients and mix well, until everything is coated.  Spread the mixture on two greased cookie sheets with sides.

Bake at 350 degrees for about 30-40 minutes, rotating pans and stirring granola every 10 minutes.  Bake until granola is somewhat crispy and lightly browned.  It will crisp up more as it cools too.  When done, remove and allow granola to cool on pans.

After granola has totally cooled, add in 2 cups raisins or other dried fruit.  Mix well in a large bowl, then transfer to a cereal tupperware for serving.

    1. Hi Lisa, This recipe would NOT be THM friendly. You are right in that the oil in this recipe moves it into crossover. This was a "pre-THM" recipe that is more a "whole foods" recipe, but not one that works well with THM. Hope that helps!
