Oatmeal Chocolate Chip Cookies (Gluten-Free)

Well, I made up another batch of these yummy cookies so I could actually write down what I put in them :)!  I have been trying to expand my gluten-free recipes and am so happy to have a good oatmeal cookie recipe now!  I hope you enjoy them.  They are SO good!

1 cup unsalted butter, softened
1 ½ cups brown sugar, packed
2 eggs
2 tsp. vanilla
½ tsp. baking soda
¼ tsp. salt
½ tsp. xanthan gum
1 tsp. cinnamon
¼ tsp. nutmeg
2 cups rolled oats processed in food processor until finely ground and floury
(OR use about 1 ¾ cups oat flour instead)
3 cups rolled oats
1 cup chocolate chips (or raisins or both!)

In a large mixing bowl, cream butter until soft and smooth.

Add brown sugar and mix well.

Add eggs and vanilla and mix well.

Add in dry ingredients (except chocolate chips/raisins), and mix well.

Stir in chocolate chips or raisins by hand.

Let cookie dough sit in bowl for a while as you preheat the oven to 350 degrees.  (I found that the cookies do better if the dough sits for a bit to allow the moisture to absorb into the oats.  The cookies won’t flatten out as much when you bake them that way!)

Drop dough onto greased cookie sheets.

Bake at 350 degrees for 12-13 minutes or until lightly browned.

Yield:  Makes about 5 dozen cookies

    1. You should be able to find oats that actually say on the package that they are gluten-free. I know some who absolutely have to stay totally away from gluten (such as those with ciliac) have to make sure they have gluten-free oats. I just use regular oats I buy in the store because I like the idea of cutting back on gluten, but don't have medical reasons (that I know of) to totally stay away from it. I hope that helps!
