Trim Healthy Mama {Mock Ice Cream Sandwich – S}

I have been helping my Dad and Mom with learning about the Trim Healthy Mama way of eating. This is a recipe that they came up with and I can’t wait to make it! Thanks Dad and Mom for letting me share this here on my blog! Enjoy!

Mock Ice Cream SandwichIn the picture they had some extra filling and spooned it on top and added a strawberry, then ate it with a fork.

MOCK ICE CREAM SANDWICHES – “S” (Makes 2)

The Cake:

Make one Fuel Pull Chocolate Cake recipe, dividing the batter into two ramekins to bake. Pop cakes out of the two ramekins to cool.  Once cool, slice down the middle to make sandwiches. (I am thinking the next time I make these, I am going to try baking them in some large muffin pans I have. This would make nice uniform sandwiches!)

The Filling:

Mix the following together in a small bowl:

  • 2 tablespoons cream cheese (we used fat free)
  • 2 tablespoons plain Greek yogurt
  • sweetener to taste
  • a few drops vanilla
  • (optional) You can add in a little sugar-free jam or mashed up berries to make another flavor besides just vanilla!

Once mixed well, fold in 4 tablespoons whipped topping (make your own and sweeten with Stevia).

Spoon filling into middle of each ice cream sandwich.  You can freeze to make an ice cream sandwich or eat right away as a layered cake.

Makes 2 sandwiches.

Sheri’s Note:  I bet you could flash freeze these and then wrap in plastic wrap and place them in a freezer bag in the freezer.  These would make yummy treats during the summer! I wonder if I could do this with my Chocolate Chip Cookie recipe…add in the filling and freeze.  Hmmm…I may have to try that too!

    1. Hi Tess! It is really easy. Just buy whipping cream at the store (in the dairy section). Put the whipping cream in your mixer with the whipping beaters. Add a bit of vanilla and some stevia to sweeten, then whip until it thickens. Hope that helps!
  1. So if I use FF cream cheese and 0% Greek yogurt, is this a FP or an S recipe? I'm getting confused! :) These look super yummy!
    1. Hi RaShell, In the original recipe I used lite cool whip in the filling, but I guess Serene and Pearl don't consider that "on plan". In order for my recipe to be included in the linkup I had to change that ingredient. So I changed it to homemade cool whip which makes it higher in fat, making it an "S". If you use FF cream cheese and Greek Yogurt and lite cool whip, I would think it will be a FP. Does that help? I believe it was just switching from using the lite cool whip to homemade that put it over the top into "S" territory.

    1. I love it too Stacy! It is really good if you make some chocolate pudding and then take half of a FP cake and break it up and mix it in with the pudding. Yum! Have a great day!
  2. Sheri, thank you for this recipe! Looks delicious. What did you use for sweetener and how much? Stevia? Liquid, powder?
    1. It is delicious! I used the NuNaturals Stevia Extract Powder..just a couple shakes, then added more if needed. Hope you like it too!
