Oat Snack Balls

1 1/2 cups rolled oats, chopped in food processor
1/2 cup sunflower seeds, chopped in food processor
1/2 cup raisins
1/2 cup chopped dates
1/2 cup milled flax seed
1/2 cup peanut butter
1/2 cup honey
Chop rolled oats and sunflower seeds in a small salad chopper or food processor, then transfer to a medium-sized bowl. Add remaining ingredients and mix well with a wooden spoon or your hands. Roll into balls the size of a walnut and place on a plate. Place in refrigerator to harden. Once they are hard, they can be transferred to a Tupperware bowl. Store in the refrigerator or freezer.
Note: Since I bought a food processor a while back, I just dump all the above ingredients in my food processor and let it whir until it forms a nice ball. Everything gets chopped up nicely. My kids LOVE these!
Variations: You can take this recipe and add your own favorite dried fruits – apricots, apples, coconut, etc. Be creative!
