I decided to try my hand at making some gluten-free banana bread. It turned out wonderful. We all liked it! I did not put nuts in the bread, just because I didn’t have any. The nuts would have made it even better! Enjoy the recipe!
BANANA BREAD (GLUTEN-FREE)
1/2 cup butter, softened
1 cup sugar (organic if possible)
2 eggs
1 tsp. vanilla
3 large ripe bananas, mashed
1 cup brown rice flour
1/3 cup garbanzo bean flour (or more brown rice flour)
1/3 cup cornstarch
1/3 cup tapioca flour
3/4 tsp. xanthan gum
2 tsp. baking powder
1 cup pecans or walnuts, chopped
In a large bowl, cream the butter and sugar. Beat in the eggs, vanilla, and bananas.
Add in the dry ingredients (except nuts) and mix well.
Stir in nuts.
Pour batter into a greased 5×9-inch loaf pan. Bake at 325 degrees for about 1 hour and 20 minutes.
