Trim Healthy Mama {Vanilla Cake – FP}

One of the THM Facebook Page moderators, Bev N., played around with my FP Cakes recipe and came up with a vanilla version!  Bev gave me permission to post it here on my blog. Thank you Bev!

VANILLA CAKE (FP)

Mix all ingredients in a large ramekin or small glass bowl (or divide up into two smaller ramekins) and bake in microwave for about 1 minute 20 seconds. Baking time will vary depending on the container you bake it in.  You can also bake this in the oven at 350 degrees for about 20 minutes or so.

As you can see from the picture above, this cake is awesome with some strawberries and whipped cream! Bev shared that she likes topping it with the Lemon Mouse recipe from the Trim Healthy Mama book!

  1. Hi Sheri, I just made the bulk recipe and added the super sweet blend instead of gentle sweet. What can I do to the mix to fix it up. I read someone’s comment above and did not realize until then that THM changed the sweetness names
    1. The Super Sweet Blend is twice as sweet at the Gentle Sweet, so that means you used twice as much as needed. What I would do then is double all the other ingredients to match it. Does that make sense? so basically you will have a double batch of the bulk mix.
  2. Made mine into pancakes by adding a Tablespoon of almond milk, decreasing sweetener to 1 tsp THM super sweet and cooked on griddle with a little coconut oil spray. Topped with some sugar free maple syrup for an awesome FP breakfast! Thank you so much for this recipe it will be going in my recipes to make again book!
    1. Hi Adrienne! What a great tweak! So glad you liked it too. I love to make mine with some Greek yogurt smeared over top, some mixed berries on top of that, and then some sf maple syrup drizzled over the top. Yum!
      1. Hi sheri, what can I use instead of protein powder and still get the same results? Will equal amounts of oat fiber would do?
        1. Hi Joy, I'm not sure if more oat fiber would work or not. I am thinking you would not use as much because the oat fiber absorbs liquid more than the protein powder. Also make sure to use lots of vanilla extract to get your vanilla flavor. I guess give it a try on a small cake and see if it works before doing a large cake. Good luck!
  3. Hello. Thank you for such a great blog and recipes. I was wondering which brands of flours you personally use to make these fp cakes? (For example, linked is the nutiva, but is that the one you use when you personally make the cakes) also, in a comment reply you said you meant Gentle Sweet but the recipe says Sweet Blend. Which is it for sure? One is sweeter than the other and has different ingredients. Thank you very much!
    1. Hi Angelica! I know it is kind of confusing with the sweeteners! When THM first came out with their sweetener, they called it "Sweet Blend" and it was similar to Truvia as far as sweetness. So it could be used in the same amounts as Truvia. Then after that they came out with the Super Sweet Blend which was a lot sweeter (they put more stevia into it to make it sweeter). When they did that they changed the name of Sweet Blend to Gentle Sweet and named the new sweeter one Super Sweet Blend. If you want to look at the conversion chart here it is: https://www.trimhealthymama.com/main-home/sweetener-conversion-chart/. I also changed my recipe to make it clear which one to use :). As far as flours, I use the oat fiber that is linked in the recipe. The coconut flour - I have used the Nutiva brand as well as one from the Azure Standard food coop. I have also bought coconut flour from Sam's Club too. The protein powder - I have used the one linked in the recipe, as well as bought the THM protein powder. I hope that helps!   4. Hi Sheri, I was looking for the vanilla bean cake (made from beans) but not seeing it. I would love to make it again since it's gluten, sugar, grain free :)

  5. The protein powder I have is not vanilla (or any flavor). Is there anything I could do to substitute without buying more protein powder? Thanks!
    1. Hi Shelly! You don't have to use the vanilla protein powder. Just use the protein powder you have and add a little vanilla extract to the cake when you mix it up. Works fine that way too!
      1. Hi Sheri, what is a little vanilla extact? 1/2-1tsp? I am making coconut creme cake which calls for 1 yellow cake pkg(2 layer cakes) so I want to use your mix. Also, do you have a substitute recipe for Vanilla Pudding Instant and confectionate sugar?
        1. Hi Heather, Yes 1/2-1 tsp of vanilla should work. I don't have a sub for vanilla pudding, but you can grind up a stevia based sweetener in a coffee grinder to "powder" it and use that. Have fun!
  6. Could I replace the whey with collagen? If so, would I use the same amount (1 T)?
  7. Would the chocolate & vanilla FP cakes be compliant on a one week fuel cycle for all fuel days, Deep S, FP and E days? I sure hope so because I love these and would like to have them on the cycle I'm considering trying in a few days!
    1. Hi Nikki, Well, it seemed to me that they wanted you to stay away from the grains during the Fuel Cycle. But then I remembered that when I did the Stubborn Losers Menu from the THM Membership site, they had included one of my FP cakes in that. So I am thinking you might be ok to have these sometimes during the Fuel Cycle week. Hope that helps! Glad you are enjoying my FP cakes by the way :)!
      1. Yes, the way I understand it is they want to keep nuts out, including nut flour, but coconut oil is highly recommended so I'd imagine coconut flour is fine, too. I love your cakes!! Honestly, the texture is usually more "on" than the high fat cakes out there!!
  8. I love this recipe! I make it in my waffle maker. It made the best waffle I've had on plan Thanks Sheri.
  9. I tried this recipe last night but it did not turn out well. Not sure what I did wrong. I noticed that it does not contain any coconut oil. Is this correct? I want to try it again to see if I get better results.
    1. Hi Cathy, This recipe does not have coconut oil because it is a FP recipe and has to be very low fat. What was it like when you made it? Too dry? Let me know and maybe I can help :)!
      1. It was a little tough. Maybe I need to cook it a little less. I cooked it in the microwave. Also I put in too much salt so I need to decrease that a little as well.
        1. Hi Cathy, Yes, I would try not cooking it in the microwave as long. This cake is a little "springy" anyway, so if you cook it too long it may get tough. But I like the springy cake covered with berries. Yum! Hope you get the kinks worked out so you can enjoy this recipe :)!
  10. Lemon Mousse is a delicious topping, but I've also discovered as you have pictured here this cake makes a wonderful strawberry shortcake!! I think this will be my dessert tonight!!
    1. Hi Jenny, No - oat fiber is something totally different than oat flour. If you grind up oats it is just oat flour. Oat fiber has 0 carbs and 0 fats - that means all the carbs have been removed from the oats leaving only the fiber. You can use some oat flour in THM recipes, but they are for the E recipes that are higher carb. Hope that helps!
