Baked Oatmeal {Quick & Easy, Make Ahead & Freeze}

My kids love baked oatmeal and it is such an easy breakfast to fix ahead of time. It is kind of like granola, but in a bar form!
I make a large pan of Baked Oatmeal, then freeze any leftovers. It works great for snacks or for breakfast another day! The recipe goes together so easily too. This will definitely be a recipe you will want to add to your Recipe Book! (Note: This is not a THM friendly recipe, but is a great one for the kids!)

Baked Oatmeal
- 1/2 cup butter, melted
- 3/4 cup brown sugar (or other sugar substitute + 1/2 tsp. maple extract)
- 3 eggs
- 2 teaspoons baking powder
- 1 tablespoon vanilla extract
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 5 cups rolled oats
Melt butter and add to a large bowl.
Stir in all the ingredients except the milk and oats. Mix well.
Add in milk and oats and stir well.
Pour into greased 9×13-inch baking dish. (You can then cover and refrigerate overnight and bake in the morning, or bake right away.)
Bake uncovered at 350 degrees for 35 minutes.
