Baked Oatmeal {Quick & Easy, Make Ahead & Freeze}

My kids love baked oatmeal and it is such an easy breakfast to fix ahead of time. It is kind of like granola, but in a bar form!

Baked Oatmeal

I make a large pan of Baked Oatmeal, then freeze any leftovers. It works great for snacks or for breakfast another day! The recipe goes together so easily too. This will definitely be a recipe you will want to add to your Recipe Book! (Note: This is not a THM friendly recipe, but is a great one for the kids!)

Baked Oatmeal

  • 1/2 cup butter, melted
  • 3/4 cup brown sugar (or other sugar substitute + 1/2 tsp. maple extract)
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 5 cups rolled oats

Melt butter and add to a large bowl.

Stir in all the ingredients except the milk and oats. Mix well.

Add in milk and oats and stir well.

Pour into greased 9Ă—13-inch baking dish. (You can then cover and refrigerate overnight and bake in the morning, or bake right away.)

Bake uncovered at 350 degrees for 35 minutes.

  1. The coconut flour cakes/muffins freeze really well too. We think they taste even better after frozen. Like some things do as they sit. :o) Just wanted to mention that. ( I cut the cake into squares first.)
