Mango Salsa

A while back my sister entered a dip recipe contest with her local newspaper.  She loves to mess around with recipes and create her own masterpieces…well this salsa recipe is one of them!  This is the recipe she entered in the contest. I hope you enjoy it!


1 red onion, finely chopped
4 large mangos, chopped
6 jalapenos, finely chopped (remove some seeds)
2 large red bell peppers, finely chopped
1-2 large limes, juiced
1 large bunch cilantro, chopped
1 small can crushed pineapple

Mix chopped onions in ice water (1 cup) with 2 tablespoons rice wine vinegar. Let soak for 30 minutes.

Chop rest of fruits and vegetables. Mix together. Drain onion and pineapple, and mix all together. Let set for one hour or overnight. Salt to taste. Add 2-4 tablespoons rice wine vinegar to taste.
