Peanut Butter Cookies (Gluten-Free)

Yesterday I was looking for a gluten-free cookie recipe that I could make to take to our Bible study group last night.  I ended up making two kinds..these Peanut Butter Cookies and some Oatmeal Chocolate Chip cookies.  They both turned out really good!  I had to mess around with the Oatmeal Chocolate Chip cookie recipe, so I need to make them again to get some exact measurements :).  But these Peanut Butter Cookies turned out great.  They are gluten-free and only take 5 ingredients to make!  Give them a try! (I’d like to try making these using honey instead of the brown sugar, but I’m not sure they would turn out right.  I’ll post about it if it turns out ok!)

1 cup peanut butter (chunky or smooth)
1/2 cup brown sugar, packed
1 large egg
1 1/4 tsp. baking soda
3/4 cup chocolate chips (this is a lot of chocolate chips, so you can use less or none at all if you want)

Preheat oven to 350 degrees.

Blend peanut butter and brown sugar with mixer until well blended.

Add egg and baking soda and blend again until mixed well.

Add in chocolate chips and stir by hand.

Roll cookie dough in about 1-inch balls or drop by teaspoonfuls onto a greased cookie sheet.

Flatten with the palm of your hand, or criss-cross with a fork (like the traditional peanut butter cookies).

Bake at 350 degrees for about 10-12 minutes or until edges of cookie are lightly browned.  Don’t cook too long!  They should be soft to the touch.

Allow to cool for a bit on the pan before removing to a cooling rack.

Store in an air-tight container…if you have any left!

Yield:  Makes 2 dozen cookies

  1. I thought this recipe was on the Trim Healthy mama plan, but with the brown sugar, I guess not?? or did you use a sugar substitute?
    1. Hi Paulette, NO, this is not a THM recipe. I think you could make your own THM brown sugar to use in the recipe and use some plan approved chocolate chips, and peanut butter with no sugar in it. It should still turn out with those substitutes. I haven't tried it though. Good luck!

I use 1 full packed cup of brown sugar or 1 full cup of white sugar when I make these... it also makes an AWESOME gluten free cookie bar... double the entire recipe, using 2 cups of sugar total, pour in a 9x13 pan, & bake at 350 for 17-20 mins :0).... YUM!!! We also frost them in place of cake (right in the pan, like a cake can be frosted), being gluten free. They also make an AWESOME giant cookie :0)!
  3. Wondering if you could substitute Almond Butter in these? My tummy is super sensitive and almonds are more easily digested than peanuts. Might have to give it a try :)
