Our family LOVES chicken…chicken fixed in all sorts of ways. Â But one of our favorites is this recipe for Oven Baked Chicken. Â It is so much healthier than fried chicken and tastes so good! Â I hope you enjoy the recipe!
OVEN BAKED CHICKEN
1/4 cup milk
2 eggs
4 slices of whole wheat bread-dried out (homemade is best!)
1 teaspoon thyme
1 teaspoon paprika
1/2 teaspoon sea salt
1/4 teaspoon black pepper
6 pieces of raw chicken (you can use boneless or not, skinless or not-your preference)Preheat oven to 375 degrees F.
In a medium sized bowl, mix together the milk and eggs with a whisk. Â Set aside.
To prepare the coating, I use my small salad chopper, but you could use a food processor or just dry bread crumbs that have been crushed up).  Break up the bread into the chopper and add in the thyme, paprika, sea salt, and black pepper.  Chop until the bread is in crumbs and the spices are mixed in.  Place this mixture in another medium sized bowl.
Coat chicken, one piece at a time, with the egg/milk mixture, then roll in the bread crumb coating.
Place chicken in a greased 9×13-inch baking dish.
Once all the chicken is coated, place (uncovered) in oven to bake for 1 hour.
Serve with some homemade cornbread and a large green salad for a yummy meal!
