Oatmeal Cream Pies

  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 3/4 cup organic sugar or Sucanat (can use granulated sugar)
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1 1/2 cups whole wheat flour (can use unbleached white flour instead)
  • 1 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon cinnamon
  • 3 cups rolled oats
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts (optional)

1. Preheat oven to 350 degrees.

2. In a large mixing bowl, beat butter until creamy. Add sugars and beat until fluffy – about 3 minutes. Beat in eggs and vanilla.

3. Add dry ingredients except raisins and nuts and mix well.

4. Stir in raisins and nuts.

5. Spoon large tablespoons of dough onto greased cookie sheets.

6. Bake until edges of cookies turn golden brown, about 10-12 minutes. Cool 1-3 minutes on cookie sheet, then remove carefully with a metal spatula to a cooling rack. Cool completely. These cookies will be pretty soft until they are cooled.

Creamy Filling

  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon vanilla
  • 2-4 teaspoons milk

Beat all ingredients on high with electric mixer until light and fluffy. Add enough milk to get desired consistency. Spread creamy filling inside of two cooled oatmeal raisin cookies. Layer in a covered container with wax paper between layers to keep them from sticking together. Store tightly covered.

  1. Thanks Sheri, but just to clarify, you only pack a little and not firmly like with brown sugar?
    1. Yes Karin. Actually when I measure out my flour, I just round the measuring cup. Instead of leveling it off, I just get a heaping cup full. But to pack, I don't push it down hard like I do brown sugar. Just pack lightly, or shake it to settle the flour. I really just round off my measuring cups though. If the recipe calls for 1 cup, I just scoop out a heaping cupful of flour. I hope that helps!
  2. Sheri, I have a question for you not directly related to this particular recipe. When you measure your home ground wheat flour for a recipe, do you measure it loosely like with store bought flour, or like Marilyn Moll teaches to firmly pack it like with traditional brown sugar? Thanks!
    1. Hi Karin, Yes you do pack the fresh ground flour a little. Because it is freshly ground, there is more air in it, so packing it a little is necessary. Thanks for asking!

  4. OK, Hannah just finished making these - I am SO glad I insisted on a double batch. YUM!!! These are absolutely incredible, and we really, really enjoyed them. I have one very anti-raisin child, so Hannah just scooped out a few for him before mixing in the raisins at the end. He doesn't usually even like oatmeal cookies without raisins, but he loved these! And the few that I have that really aren't crazy about raisins loved them as well, with no attempt at picking out the raisins or anything. :-) I have loved every single recipe of yours that I've ever tried, and you have got a real winner here again - this one is going into my recipe binder for sure.
