Fudgy Peanut Butter Oat Balls

1-1/2 cups rolled oats
1/2 cup sunflower seeds
1 cup raisins
1/2 cup raw almonds
1 cup unsweetened coconut flakes
1/2 cup flax seed, milled
1/4 cup coconut oil, softened
1/2 cup peanut butter
1/2 cup honey
1/4 cup cocoa powder

Put all ingredients into your food processor.  Blend up until smooth and forms into a ball.

Shape into walnut-size balls and store in a covered container in the refrigerator.

Note:  My youngest prefers these over chocolate chip cookies…so they must be good!  We absolutely love these!  You could even freeze them and just pull out a few at a time to satisfy your sweet tooth.  Yummy!

  1. Oh, goodness, are these ever good!!! I didn't happen to have any flax seed and didn't want to run to the store for more. They seemed to work fine without the flax seed. I did toss in some mini chocolate chips. :-) Yum, yum, yum. Thank you for posting this, Sheri! Oh, and did I mention that I made a double batch and they are almost gone LOL? The children (and the dh) all adored them.
    1. Hi Kate, no you don't have to put the flax in. I just like to for the extra health benefits. I'm glad you all liked them! I made a double batch over the past weekend and they are almost gone too. We LOVE these and my kids prefer them over cookies!
      1. Is the flaxseed then crushed when you process it? How delicate is the resulting flaxseed meal? I've heard that it goes rancid easily and is not good for you after it does. Do you have any information on that? These look YUMMY! I'm thinking I could also use sunbutter to take make them peanut free...although I LOVE pb!
        1. Hi Kelly, The flaxseed in this recipe is milled, meaning it is ground up. I used to buy milled flaxseed at Walmart, but now buy whole flaxseed and grind it up myself in a little coffee bean grinder. It works great! FYI, I grind up a bunch of flaxseed and keep it in the freezer. It does go rancid quickly, so this is what I do to keep it as fresh as possible. Note: You cannot grind up your whole flaxseed in your grain mill. The moisture content is too high. Just buy a coffee bean grinder and it works great. Have fun! These are SO yummy!
    1. Hi Kim...this recipe is a take-off from the Oat Snack Balls I posted a few days ago. I started with that recipe and kept adding more things. I really liked how they turned out. It is like eating fudge balls, except they are packed with goodness! Enjoy!
