Corn Syrup Substitute

We all know that corn syrup is not the best thing for us…and I was so excited to find a substitute that I could use in a few of my dessert recipes that use corn syrup (like pecan pie!).  This is fairly easy to make and works great!

Here is the recipe…

Ingredients:

  • 2 cups Sucanat or organic sugar
  • 3/4 cup water
  • 1/4 teaspoon cream of tartar
  • dash of salt

Combine all the ingredients in a large pan.  Stir and bring to a boil.  Reduce heat to simmer, put a cover on, and simmer for 3 minutes.  Uncover and cook until it reaches soft ball stage (put a candy thermometer in the pan to check).  Stir constantly while cooking.

Cool the syrup and store in a glass jar with lid at room temperature.  This should keep for a couple months.

This makes about 2 cups of syrup.

For dark corn syrup add 1/4 cup molasses to the recipe before bringing to a boil.

  1. Can anyone tell me why honey is not the perfect substitute for corn syrup. I have to admit that I've just given up making things with corn syrup, but I've always wondered why you couldn't just substitute honey. Without a doubt I will be trying this recipe. I have a son that has horrible anger issues anytime he ingests anything with corn syrup (especially high fructose corn syrup) Thank you for posting this.
    1. Hi Carla, You can substitute honey for corn syrup in recipes, but some recipes just don't taste the same with that honey flavor. So, I guess depending on the recipe, you could use either honey or this corn syrup substitute. Happy baking!

  3. I am excited about this! I avoid corn syrup but it never occured to me to find a substitute. My husband's favorite cake has corn syrup in it and I make it for him anyway but cringe! :) I am going to try this instead and see how it works! Thank you for posting. Yippee!!! Have a blessed day!
