Quick and Yummy Waffles and Pancakes

A while ago I found this recipe in a cookbook I have and I’ve been using it ever since! I wrote out the recipe on an index card and taped it on the inside of my kitchen cupboard door where I do my baking. This recipe makes the most delicious waffles and pancakes…and it is rather quick to mix up too! Give it a try!
QUICK AND YUMMY WAFFLES or PANCAKES
- 2 eggs
- 2 1/2 cups milk (I use whole milk)
- 1/2 cup olive oil
- 1/4 cup honey
- 3 cups whole wheat flour (I use fresh-ground hard white)
- 1 tsp. sea salt
- 4 tsp. baking powder
Beat together eggs, milk, oil, and honey in bowl. Add in rest of ingredients and mix well with a whisk. Fry on hot griddle or make waffles in a waffle iron. Top with butter and homemade syrup (I’ll have to post that recipe too..real soon!), applesauce, or fresh fruit!
