Sweet and Sour Dill Pickles

Makes 4 quarts.
Wash cukes.
Cut in 1-inch lengths or 1/2-inch slices.
Fill 4 quart jars.
Add to each jar:
- 3-4 onion slices
- 2 pieces celery (1-inch pieces)
- 2-3 heads dill OR 1 tsp. dill seed
Syrup
- 4 cups sugar
- 1/2 cup pickling salt
- 1 quart vinegar
- 2 cups water
Dissolve sugar and salt in vinegar and water and bring to boil.
Fill jars to 1/4 inch from the top.
Seal and process 10 minutes in water bath.

Hi Ellie, I haven’t tried it, but I wonder if you could use Truvia in place of the sugar. I think the sugar is really the only thing that would need substituted out to be THM friendly. I’ll have to give it a try sometime. I love pickles too!
