Sweet and Sour Dill Pickles

Makes 4 quarts.

Wash cukes.

Cut in 1-inch lengths or 1/2-inch slices.

Fill 4 quart jars.

Add to each jar:

  • 3-4 onion slices
  • 2 pieces celery (1-inch pieces)
  • 2-3 heads dill OR 1 tsp. dill seed

Syrup

  • 4 cups sugar
  • 1/2 cup pickling salt
  • 1 quart vinegar
  • 2 cups water

Dissolve sugar and salt in vinegar and water and bring to boil.

Fill jars to 1/4 inch from the top.

Seal and process 10 minutes in water bath.

    1. Hi Ellie, I haven't tried it, but I wonder if you could use Truvia in place of the sugar. I think the sugar is really the only thing that would need substituted out to be THM friendly. I'll have to give it a try sometime. I love pickles too!
