Chewy Brownies

I have tried homemade brownie recipes over the years and had still not really found a good recipe that makes a brownie like those “really-good-for-you” boxed mixes from Aldi….until now! These are so rich and GOOD! You HAVE to give them a try! I warn you, though, cut small pieces…it is very rich! Enjoy!
CHEWY BROWNIES
1/3 cup cocoa
½ cup plus 2 tablespoons boiling water
2 ounces unsweetened chocolate, finely chopped
4 tablespoons unsalted butter, melted
½ cup plus 2 tablespoons olive oil
2 large eggs
2 large egg yolks
2 teaspoons vanilla
2 cups Sucanat or organic sugar
1 ¾ cup whole wheat flour
¾ teaspoon sea salt
½ to 1 cup chocolate chips or nutsAdjust oven rack to lowest position and preheat oven to 350 degrees.
Grease the bottom only of a 9×13-inch baking dish and set aside.
In a large bowl, whisk the cocoa and boiling water until smooth.
Add unsweetened chocolate and whisk until the chocolate is melted.
Add in the melted butter and oil and whisk (mixture may look curdled)
Add in eggs, egg yolks, and vanilla and whisk until smooth.
Add in sugar and whisk until smooth.
Add in flour and salt with a rubber spatula until combined.
Pour batter into prepared baking dish and sprinkle with chocolate chips and/or nuts if desired.
Bake 30-35 minutes or until toothpick inserted in middle comes out clean.
