Pumpkin Raisin Spice Muffins

The weather has been absolutely beautiful here! Fall is in the air…cool breezes blowing at night…I just LOVE it! So…when I was out of chocolate chips this morning to make our normal Thursday morning breakfast (Pumpkin Chocolate Chip Muffins), I decided to take the Pumpkin Raisin Spice Cake recipe and adjust it a little and make muffins! My kids loved it! I also made a few substitutions to make it healthier. I hope you enjoy the recipe!

PUMPKIN RAISIN SPICE MUFFINS
- 1/2 cup butter, melted
- 1/2 cup applesauce (natural, no sugar added)
- 4 eggs
- 1 cup honey
- 15-oz. can pumpkin
- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon ground cloves
- 1 teaspoon pumpkin pie spice (or use 1/2 t. cinnamon, 1/4 t. nutmeg, 1/8 t. ginger, 1/8 t. ground cloves)
- 1 cup raisins
In a large bowl, combine all ingredients until mixed well.
Fill muffin cups and bake at 400 degrees for 20-25 minutes. Makes 24 muffins.
