Trim Healthy Mama {Single Serve Pumpkin Pie – S}

I love pumpkin pie, especially this time of year! Now you can fix one for yourself whenever you want and it is so easy! So go ahead and fix yourself one and enjoy!

SINGLE SERVE PUMPKIN PIE (S)

Crust:

1 tablespoon ground flax

1 tablespoon almond flour

1 tablespoon coconut flakes (chopped into tiny bits if desired)

1 tablespoon unsalted butter

1 teaspoon Truvia

In a small bowl mix the above ingredients until crumbly.

Grease a larger sized ramekin (I have a little bigger one than what I use for my muffins and I used that.)

Press crust mixture into bottom of ramekin with spoon.

Filling:

1/2 cup pumpkin puree

3 tablespoons egg whites

1/4 teaspoon vanilla

1/2 teaspoon cinnamon

1/2 teaspoon pumpkin pie spice

1/8 teaspoon sea salt

1 tablespoon Truvia

In a small bowl mix the above ingredients and then pour on top of crust in ramekin.

Bake in the microwave for 2 minutes*.  Allow to cool some before eating.  This will allow it to firm up a bit more.

You can either eat the pumpkin pie right out of the ramekin or turn out onto a plate (like in the picture above) and have the crust on top.

Add a dollop of whipped cream on top and enjoy!

* If you don’t want to use the microwave oven, I am sure you could bake this in the oven as you would a pumpkin pie — 350 degrees for 30-60 minutes, until knife inserted in center comes out clean.

  1. Now most MIMs bake for 1.5 min in the microwave, or 15min in a 350 oven. If this pie bakes for 2 min in the microwave, do you think 30-60 min is a huge range, and also way overshot?
