This past year, my parents had to go on a gluten-free, dairy-free, sugar-free diet due to health issues. They have both felt so much better and seen amazing results from their diet changes. I am so excited for them! When they called a couple months ago to let us know they were coming for a visit for a couple weeks (they live on the west coast and we live in the midwest, so we hadn’t seen them since Christmas 2008!), I started doing some research and experimenting with some gluten-free recipes (you know how I LOVE to experiment in the kitchen!).
While I don’t know all there is to know about gluten-free cooking, I did learn some things. I came up with some rather simple recipes that don’t take a lot of ingredients to make. I wanted to have some gluten-free recipes to make while they were here visiting, as well as sending them home with some recipes to try to add some more variety to their diet. They loved these recipes and enjoyed the variety of foods we prepared. It was my mom’s idea to put these into an ebook that would maybe help others who are needing to start a gluten-free diet. I really was surprised at how easy it was to convert many of our favorite recipes over to gluten-free, dairy-free, and sugar-free.
Note: These recipes are gluten-free, dairy-free (except eggs and hard cheeses), and sugar-free (using only Agave Nectar or Honey to sweeten). If you do not need to go dairy-free, feel free to substitute cow’s milk for the other milks in the recipes.
