Taco Salad

My family loves taco salad and it is an easy meal to fix and have ready for our Sunday noon meal.  I prepare the meat/bean mixture ahead of time, have the veggies chopped up and ready in the refrigerator.  Then all I have to do is heat the meat/beans up when we get home from church and we are ready to eat!

1 lb. ground beef

¼ cup water

½ onion, chopped OR 1 Tablespoon dried minced onion

1-2 Tablespoons taco seasoning mix (I use my homemade taco mix)

1 can chili beans, drained and rinsed (or 2 cups cooked beans)

shredded lettuce (romaine is great)

2 tomatoes, chopped

1 cucumber, peeled and chopped

2 carrots, peeled and shredded

shredded cheddar cheese

sour cream or salsa or other salad dressing (such as Ranch or Dorothy Lynch-I use my homemade dressings for both of these)

tortilla chips

Brown ground beef with onion.  Drain excess grease.  Stir taco seasoning and water into meat mixture, then stir in beans and simmer for about 5 minutes.

Serve this “taco bar” style and let your family build their own salad.  Start with crunched up chips on their plate, then top with meat, cheese and all the toppings.  Then pour dressing over top of it all.  Yummy!
