Peanut Butter Cookies

PEANUT BUTTER COOKIES

1/2 cup sugar
1 cup brown sugar, packed
1 cup unsalted butter, softened
1 cup peanut butter
2 eggs
2 1/2 cups unbleached flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Cream the butter for 2 minutes. Add the sugars and cream for 2 more minutes.

Mix in the peanut butter and eggs. Mix together the dry ingredients and stir into the butter mixture.

Refrigerate dough for at least 3 hours or overnight.

Preheat oven to 300 degrees. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet.

Flatten in crisscross pattern with a fork.

Bake until light brown, about 15 minutes. Cool on baking sheets for a minute, then transfer to rack to cool.

Yield: 4 dozen
