Homemade for the Holidays #29: Homemade Caramel Corn

I never knew caramel corn was so easy to make! I found a recipe online and adapted it using honey and we REALLY liked it! Whip up a batch of this caramel corn and put in a pretty holiday tin for a neat gift. Enjoy!
Homemade Caramel Corn
- 1/2 cup popcorn kernels, popped
- 3/4 cup packed brown sugar
- 1/4 cup butter
- 3 Tablespoons honey
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon vanilla
- 1 cup peanuts or other nuts (optional)
Before you begin, preheat the oven to 300 degrees.
Start by popping your popcorn into a large bowl. You will take 1/2 cup of popcorn kernels and pop them (that is one batch in my air popper). Once popped, set aside. (If you want to use nuts, you can mix it in with the popcorn in the bowl, then set aside.
In a saucepan, add the brown sugar, butter, honey, and salt. Cook over low heat until the butter is melted. Once melted, cook without stirring for 3 minutes.
Remove from heat, add baking soda and vanilla and mix well.
Pour the mixture over the popcorn in the bowl and stir until all the popcorn is lightly coated.
Spread popcorn onto greased cookie sheets (I used two cookie sheets to spread it out better).
Bake at 300 degrees for 15 minutes.
Remove from oven and stir a bit to break up the popcorn. Allow to cool, break it up, and store in an airtight container.
