Ingredients

Bring the following to a boil and then cool to room temperature:

4 cups sugar
3 cups honey
1 cup butter

Then add:

1 ½ cups cold strong coffee
3 teaspoons baking soda
2 teaspoons baking powder
3 teaspoons salt
2 ½ teaspoons cinnamon
2 teaspoons pepper
2 ½ teaspoons allspice
2 ½ teaspoons cloves
9 teaspoons Anise Extract
22 cups flour
Instructions

Makes a medium stiff dough but not sticky. Roll to 1 inch thick and cut with donut hole cutter. Place on cookie sheets and bake at 375 degrees for 10-12 minutes.

While still warm, dunk peppernuts into a powdered sugar frosting mixture (make two colors – red and green). Dunk the peppernuts in the frosting mixture and allow to drip and dry on wire cooling racks. Once totally cool and frosting is dry, store in airtight container.

NOTE: This recipe makes a BUNCH of peppernuts! You can cut the recipe in half or quarter it to make a smaller batch. My grandparents always made these too every Christmas. They stored them in those big popcorn tins. I think these are actually better the longer they are stored. That Anise flavoring gets stronger the longer you store them. Enjoy!

    1. On a side note... instead of anise extract, we used the anise candy oil. 1.5 bottles for the recipe.
    2. That is amazing Amy! I have never heard of anyone else having a recipe like this. The peppernuts everyone else makes are the small crunchy things. I love our recipe better! So glad to share the recipe with you!
    1. Hi Katrina, Yes, the recipe is right -- 22 cups of flour. However, I always cut the recipe down and only make a half or a fourth of the recipe. If you make the whole recipe, it makes a TON of peppernuts! My kids were just asking me if it was time to make peppernuts again. They really love these. Have fun!
  2. I wonder how these would taste with a different extract. Anise is licorice flavor, right? We aren't fans of that flavor. With the spices and coffee, etc. I think a combination of rum extract and vanilla might be good. Of course then they wouldn't be peppernuts. What would my German great-grandmother (whom I never met) think? :D
    1. Hi Hillary! I would think you could substitute some other extracts such as you mentioned. Yes, they would taste different, but that's ok. My husband doesn't like the anise flavor (black licorice flavor) either. Have fun experimenting!
