Whole Wheat Macaroni and Cheese

My kids love macaroni and cheese…so I came up with a homemade version instead of the boxed stuff.  No, it is not the same, but it is pretty good! Enjoy!

Mac and Cheese

WHOLE WHEAT MACARONI & CHEESE

  • 2 cups whole wheat elbow macaroni
  • 1/4 cup butter
  • 1/4 cup whole wheat flour
  • 2 cups chicken broth (or use 2 cups water & 2 teas. chicken bouillon granules)
  • 2/3 cup milk
  • 1 teaspoon sea salt
  • 2 cups shredded cheddar cheese

Preheat oven to 350 degrees. Cook macaroni according to package directions; drain. While noodles are cooking, melt butter in a large saucepan over medium heat. Once melted, stir in whole wheat flour until smooth and bubbly. Slowly stir in chicken broth, milk, and salt. Boil for 1 minute, until it thickens. Stir in cheddar cheese to melt. Add cheese sauce to cooked, drained noodles. Mix well. Transfer to a greased 2-quart casserole dish. Bake, uncovered, for 30 minutes at 350 degrees.

Notes: We like to add tuna and peas to this to make it a meal. Ham is also good chopped up in it, served with peas on the side. Enjoy!
