Trim Healthy Mama {Waffles or Pancakes}

My family loves to have a breakfast meal for dinner sometimes and waffles is our favorite.  I figured out a way that I could have a waffle too and stay “on plan” with the Trim Healthy Mama way of eating.  Yeah!

What I did was while the other waffles were baking in the waffle iron, I mixed up the Bread in a Mug recipe (on page 265 of the Trim Healthy Mama book) except with a few additions.  To the original recipe I added a dash of vanilla, a couple dashes of NuNaturals or a couple teaspoons of Truvia, and a dash of cinnamon and nutmeg.  I bet you could even add a bit of maple extract for another yummy variation!

When I had finished baking the other waffles, I poured the Bread in a Mug batter into the waffle iron and spread it around as thin as I could.  As you can tell from the picture above, it didn’t totally fill the waffle iron.  That’s ok though.  I was just happy to get to have a waffle too!  The waffle had to be baked in the waffle iron a bit longer than normal too.  I just kept checking it until it looked done.

Since this is an “S” meal (high fat, low carb), I added some eggs on the side.  I topped the waffle with some sugar-free syrup, but you could also top it with some Greek yogurt and berries.  Yum!  I have done both and they are both good.

UPDATE:  You can also make this batter into pancakes!  Just fry on a hot greased griddle like you would regular pancakes.  Top with the same toppings as the waffle.  Yum!

I am having so much fun with the Trim Healthy Mama way of eating.  The weight continues to come off slowly but steadily and it won’t be too much longer until I’ll be at my goal weight (which I haven’t been at since college…just a few years ago :)!)

    1. Hi Liz, No they aren't really crispy when you first make them. What you can do is stick them in the toaster and that will help crisp up the outside!
  1. Oh my wonder! I've been afraid of attempting waffles but these are so easy and delicious. I added a capful of cream (1t maybe) to give the BIM a bit more spreading ability. Thank you for sharing this!
    1. Hi Brooke! Glad you liked the waffle recipe! I'll have to try adding a bit of almond milk or cream too. The batter is thick, but I just spread it with a spoon and it works.
  2. Just wanted to give you a big Thank You for the waffle idea! My husband & I love waffles and were missing them-until now. I use a Belgian waffle maker and one mug recipe, spread out on the iron, like you said, made just about two nice little waffles. I made some of Gwen's stevia pancake syrup and with a few adjustments it will all be wonderful! Must mention that I forgot to make the additions to the batter that you suggested, but even plain, they were still good. Loving your website with all the useful THM recipes and info. Thank you!

    1. Hi Natasha, Yes you sure can use butter or peanut butter, but don't overdo it! I really like some greek yogurt with berries and some sugar free syrup drizzled over the top. So good! Enjoy!
  4. The THM pancakes don't need to be runny. Mix the dry ingredients in blender. Pour into bowl. Mix the wet ingredients in blender. Pour into bowl of dry ingredients and stir by hand until mixed. This will make a thicker batter.

  5. I wonder how it would work to use the THM pancake batter in the waffle iron. Has anyone tried that?
    1. I haven't tried it. I guess I thought since the batter was pretty runny that it might not work very well in the waffle iron. Give it a try and see!
  6. We are actually going to be having waffles at our next small group pot luck on Sunday so I may take along the batter for this so I don't have to worry about going off the wagon! Thanks for this idea!
  7. Thanks for sharing this tweaked THM recipe. I wish I had it sooner. My son had waffles for his birthday breakfast, and I ate something else. I'm losing the weight I want to on this plan also. Thanks to your encouragement to us to try it. I look forward to trying this recipe and others.
