Trim Healthy Mama {sample lunch}

In light of my recent post regarding my weight loss journey and the Trim Healthy Mama book, I thought I would do a post maybe once a week highlighting some of things I have been eating.

This is a picture of a sandwich my daughter fixed actually a month or so ago.  The bread is the Bread in a Mug recipe from the Trim Healthy Mama book (glutten-free, low carb bread).

You can make this bread in a coffee mug, but I like to make mine in a small Pyrex bowl.  It just takes a minute to mix all the ingredients in the bowl and cook in the microwave for 1 minute.  I pop the bread out of the bowl to cool, then slice in half to make two slices for my sandwich.

Smear the bread slices with some mayonnaise, then fill with your favorite meats, cheese, lettuce and tomato…yum!

When I am hungry for a sandwich at lunch, I make this recipe and fill with whatever meat and fillings I have on hand.  I also experiment with adding different flavorings to the bread…like Parmesan cheese, oregano, garlic or onion powder.  The ideas are endless!  You can even make grilled cheese sandwiches with this bread by making it in a mug, then slicing into four slices to make two little sandwiches.  These go great with some homemade tomato soup!

  1. I would like to make an s grilled cheese sandwich with homemade s bread but am not sure how much cheddar cheese is ok to use. Do you know? I like to use medium cheddar brick cheese.
  2. I love reading about your weightloss journey using the Trim Healthy Mama book. Congratulations on losing 28 pounds! I, too, am saving my Swag Bucks to purchase my copy...almost there! I'm excited about losing weight and still being able to eat! I notice many of the recipes call for items that I don't keep in my kitchen, like the almond and coconut flour. Where do you find these items? Would a Whole Foods store carry them? Or do you order them online? Keep up the great work and thanks for sharing your journey with us! It has really helped motivate me!!
    1. Hi Lisa! As far as where I get the almond flour and coconut flour. I bought almond meal flour through Azure and it wasn't too expensive. The coconut flour I bought through Vitacost. Their price was much cheaper than anywhere else. I find that I can get things online much cheaper than a local health food store most of the time.   3. Thanks for reviewing this book. It's on my wish list. Do the recipes use whole foods or convience foods? We are trying to eat a whole food diet without refined sugar or grains. Just wondering if this book fits that criteria.
    1. Hi Amy, The recipes do use whole foods. There are some convenience foods used (such as the Joseph's Pita Bread), but basically it is whole foods, mostly gluten-free, low glycemic recipes.   4. Thank you so much for sharing! I was really wondering what some of the meals look like form the book. The book is on my wish list. :) Do you think there is any possible way to adapt the bread recipe if someone doesn't have a microwave?
    1. Hi RaShell, Yes, the book does give instructions for baking the bread in the oven. In fact one of the sisters (authors) despises using microwaves and gives her younger sister a hard time about the recipes using microwaves :). Anyway, for the breads and muffins recipes that use the microwave, they also give instructions for versions to bake in the oven. I just haven't tried any yet. Have a great day! FYI...save up your Swagbucks and use them to buy this book through Amazon! That is what I did!

        1. Yeah! You are going to LOVE it! I am taking my THM book on Friday when we go visit a good friend of mine..she wants to look at it too. I am just amazed that I continue to slowly lose weight and feel like I am eating like a king! Have a great day!
