Trim Healthy Mama {Cottage Cheese Berry Delight}

This is one meal that I fall back on quite often as it is quick and easy to throw together.  I’ve fixed it for breakfasts or lunches when I needed something quick and I didn’t want to think about it too much.  I have also fixed a smaller portion for a snack.  Yum!

Sugar-Free with Sheri

Since this is a Fuel Pull meal, I didn’t have to think twice about whether I could have it or not :).  Here is the recipe:

COTTAGE CHEESE BERRY DELIGHT – Fuel Pull

1 cup of 1% cottage cheese
1 cup mixed frozen berries, thawed (I like blackberries, blueberries, and raspberries)
1 teaspoon vanilla
Several dashes of NuNaturals (just add a bit and taste test…then add more as needed)

Mix all ingredients in a large bowl and enjoy!

You can also add some minimal amounts of chopped nuts too.  That adds a bit of extra flavor and crunch!

    1. Hi Susan, NuNaturals is a stevia sweetener that the THM sisters recommended at the very beginning. It is a brand of stevia powder. You can sub whatever stevia powder you want to use though. Hope that helps!
    1. Hi Vicki, Yes, you can have the whole recipe! I do this often for lunch (in fact I am in the middle of making this today) because it is so quick and easy. I also like to stir in a bit of 0% Greek yogurt. If you want to make this an S instead of a FP, you can also stir in some cream cheese. Yum!
    1. How funny Laura! Yes it does taste SO good! Many days I fix this for lunch when I don't have a lot of time. Love it!
