Chocolate ice cream in a dish.

I love the ice cream recipe in the Trim Healthy Mama book, but I don’t like to wait! So when I saw a recipe online for a protein shake, I adjusted it to make chocolate ice cream…and it is SO good! As you can tell by my picture below, it does start to melt fast. It is very “soft serve” but oh so good!

CHOCOLATE ICE CREAM – “Fuel Pull”

Add everything but the Glucomannan to a blender and blend to break up ice.  Add in the Glucomannan and continue to blend until smooth. Taste test and add more sweetener and/or salt as needed.

Serve immediately, put in the freezer to thicken a little more, or freeze and eat later. If you freeze it for later, you will need to let it sit for a bit to soften before eating.

I am thinking this would be very good served with my Fuel Pull Chocolate Cake!  Yummy!

Yield: Makes 2 large servings!

Variations:

  • Add a tablespoon of peanut flour to make a chocolate-peanut butter ice cream.
  • Leave the cocoa out and replace some of the ice with frozen strawberries for a strawberry ice cream.

  1. Have you made the vanilla version yet? I sure would like to try it but you might know better than me how to make it…lol
    1. Hi Linda, I mostly make the chocolate version, but I think did make the vanilla once. If I remember right, I added more vanilla extract and maybe some other extracts to flavor it. Hope that helps!
  2. I made this with frozen strawberries, no glucomannan or whey protein powder.... SO GOOD! I want to try an "S" version using heavy cream, pumpkin, and spices. LOVE your blog, thanks so much! Lisa
    1. Hi Lisa! Sounds good, I'll have to give it a try! I'm glad you are enjoying my blog too. Have a blessed day!
  3. Hi Sheri, I love your website. I was wondering what kind of blender you use to make this. Is this one of those ones where you need an expensive blender, or will a cheap one work?
    1. Hi Marie! I'm glad you are enjoying me site :)! As far as blenders, I don't have the cheapest blender you can buy, but it is definitely not the most expensive. I'd love to have a heavy duty one like a Vitamix, but those are around $400 I think. I have had a couple in the past several years and they were more in the $60 range. I hope that helps! Have a great day.
  4. That's why I've not yet made the ice cream in the book...I don't want to wait! :-) Now to get a good blender so I can make these ice treats and smoothies.
  5. I make these a lot! But I called them shakes. LOL LOL :-) I prefer xanthan though. Man, I want some right now. Sheri, you are awesome. Thanks for linking at Trim Healthy Tuesday!
    1. This recipe does taste some like the chocolate shake, but just thicker. I wonder if the cottage cheese makes it creamier or something. It is just good! Yum!
  6. I just tried mint chocolate chip! Yummy! I just added peppermint extract and about 1/4 batch of skinny chocolate. I also left out the vanilla.
    1. Oh yummy! That sounds delicious. I have tried the strawberry and chocolate/peanut butter version and they were very yummy. I want to try a vanilla version too soon..maybe adding some butter flavoring and more vanilla. We'll see how that goes. Thanks for sharing!
    1. I am sitting here now having my Fuel Pull Chocolate Cake with the Chocolate Peanut Butter version of this ice cream on top. OH wow! It is GOOD!!! Enjoy!
  7. Great post! MUST HAVE POT HOLDER like yours for the perfect gift to someone. Did you make it, can you tell me where I can get one! Thank you!
    1. Hi Chandra, I love the potholder too! My two youngest sons (age 5 and 9) made potholders for me for my birthday. This one was made by my 9 year old son. My mom (who is an excellent sewer) helped them. Let me know if you are serious about wanting one..I'll see what I can do!
      1. Hi Sheri, Awesome birthday gift & learning they are 'homemade' and by your son(s) is so impressive! How can it be any better; oh YES, spending time with Grandma makes it nearly perfect! My fondest memories are time spent with my Grandma. She taught me to crochet (among about one hundred other life lessons and skills) and I've loved to crochet ever since. Yes, Sheri, I am serious. I have a sister-in-law with a kitchen painted the blue background & then decorated with daisy motif and finding gifts with those features is near to impossible. Maybe 2, or 3 pot holders? Depends on the availability of the fabric, but yes, Sheri...really do want some. Do you etsy? Otherwise, just let me know and I can send you payment either check or paypal. I'm really thrilled @ the possibility of having these to give as a gift. Thanks so much! Chandra Lyons
  8. I am eating this right now. Tastes like soft serve. Sooooo good. The possibilities are endless! I added crunchy peanutbutter for some crunch. Makes it an S, but oh so yummy! Thanks for the simple recipe!
    1. Hi Amy, So glad you liked it! That sounds good adding some crunchy peanut butter! Yum! Or what about making a peanut butter ice cream (omit cocoa and add peanut flour instead), and then add in some skinny chocolate chunks. Oh..I am going to have to try that too! Thanks for more ideas!
