Trim Healthy Mama {Berry Coconut Crisp – S}

I love berries and I LOVE them in pies and crisps. I made up this combination which includes coconut flakes and some whey protein powder (for some extra protein ) in the crumble topping and it is SO good! Make this recipe for one serving or multiply the recipe and bake in a larger dish to serve to your family. Either way this Berry Coconut Crisp is delicious and tastes SO good on these cold fall mornings. Enjoy!

Sugar-Free with Sheri

BERRY COCONUT CRISP (S)

1 cup frozen mixed berries (just be careful not to get too many blueberries!)

1 tablespoon coconut flour

1 tablespoon unsweetened coconut flakes

2 tablespoons flax meal

1/2 teaspoon baking powder

Dash salt

1 tablespoon Truvia

1/2 scoop whey protein powder

1 1/2 tablespoons coconut oil, melted

Place berries in the bottom of a small baking dish.

Mix remaining ingredients in a small bowl until crumbly. Toss over berries in baking dish.

Bake at 375 degrees for 25 minutes. Allow to cool slightly before eating.

Serves 1.

Eat for breakfast topped with some Greek Yogurt or serve as a dessert with a bit of homemade whipped topping.

    1. Hi Lisa! You sure can make this without the whey protein powder. You can use some other sort of protein powder that is not dairy based if you want. The reason was to just add some more protein to it. Hope that helps!

  2. Any idea what the carb count would be? It seems like it would be high per serving. 10-ish carbs for the berries, 1 for coconut flour, and 1 TBSP of Truvia is 12 carbs. And my protein powder has 2 carbs per scoop. 25 carbs Am I wrong?
  3. This looks delicious. Since it is a single serving, would you have an idea if it could be cooked in a microwave? If so, how long do you think it would take? Thanks!
    1. Hi Kay, This gets crispier in the oven, but if you want to cook in the microwave you can. I think I have done it for about 1-1 1/2 minutes. Enjoy!
  4. Would I be able to substitute the dry ingredients with the baking blend from trim Healthy Mama, if so what do you think the measurements would be?
    1. Hi Virginia, I would think it would work ok. I would probably use 3 Tablespoons to replace the 1 Tablespoon of coconut flour and 2 Tablespoons of flax meal. Hope it works ok! Have a great day!
    1. Hi Mel, You could just leave out the protein powder. It adds more protein, but if you add some yogurt or some other protein to your meal that would work. Enjoy!

I have a degree in Nutrition but have been a health "foodie" for years and studying nutrition for a total of 10. I've been on every healthy food plan imaginable before finally finding THM and being happy.
