Quick and Easy Breakfast Ideas (Share Your Favorite Tips & Recipes!)

Recently a reader asked me for some quick and easy breakfast ideas she could fix for her kids. For many of us, we don’t always have a ton of time in the mornings to fix an elaborate meal, so having something quick or made up ahead of time is such a help! (She also asked about some good school lunch ideas, but I’ll cover that in another post!)

Quick & Easy Breakfast Ideas

Before I share with you some breakfast ideas, I want to share a few general tips to make your breakfasts go smoother.

Breakfast Tips

  • Set aside some time over the weekend to make some breakfast foods to put in the freezer. It is fine and dandy to have all these great breakfast ideas, but the key is getting things made ahead of time. You will be surprised how much you can accomplish in an hour even. So look at your calendar and block out an hour over the weekend to get a few things in the freezer.
  • Make sure you have a clean kitchen before going to bed. There is nothing more frustrating than waking up in the morning, trying to get a quick breakfast on the table, and having dirty dishes all over the place. So do your best to clean up the kitchen and you will be a much happier camper come morning time!
  • Plan out your breakfasts. After you have done your weekend baking and putting breakfast foods in the freezer, take a few minutes to plan out your breakfasts for the week.
  • Prepare the night before. The night before, take a look at what you planned to have for breakfast so if you need to move food to the refrigerator to thaw overnight you can. You can even set the breakfast table if you wish. I have never gone this far, but I know many who do this and it helps save more time in the morning.
  • Keep it simple. I love trying out new recipes and making complicated meals, but save those extra special recipes for the weekends or for days when you have more time. Be content to keep your weekday meals simple and nutritious.

Quick and Easy Breakfast Ideas

Whether you homeschool or not, it is such a help to have quick and easy breakfasts! Below I will share some ideas for some breakfasts that you can make ahead of time and/or quickly fix or warm up in the morning.

  • Baked Oatmeal – I can’t believe I don’t have this recipe on my site, but it will have a post of its own soon! (See below for the recipe.) This is one breakfast that freezes really well and is so easy to warm up in the morning. I make a big pan of Baked Oatmeal, cut it up into serving-sized pieces, and freeze in a gallon ziplock bag. One of my kids loves to have this as a snack sometimes too!
  • Muffins – My kids love muffins and they are so easy to make up ahead of time and put in the freezer! Just pull out however many muffins you need for breakfast and thaw in the microwave OR put them in the refrigerator overnight. Here are some muffin recipes that we love: Pumpkin Chocolate Chip Muffins, Apple Cinnamon Muffins, Applesauce Muffins, Berry Coconut Flour Muffins, Blueberry Oat Bran Muffins, Chocolate Vanilla Swirl Muffins, Oatmeal Muffins, and Pumpkin Raisin Spice Muffins.
  • Scrambled Eggs & Toast – This breakfast will take a bit more time, but fixing a pan of scrambled eggs and some toast would make a great breakfast.
  • Waffles or PancakesI love my recipe for Waffles and Pancakes. It takes few ingredients and is so quick to mix up! But what is even better about making waffles and pancakes is that you can make up a huge batch and freeze them! Then for breakfast you can easily take them out of the freezer and pop them in the toaster or microwave to thaw, warm, and serve! Add some fruit on the side and you have a quick and healthy breakfast for the kids!
  • Breakfast Cookies – This recipe can actually be made for breakfasts or for snacks. My kids LOVE these Breakfast Cookies. I usually double, triple, or sometimes quadruple the recipe so that it makes a huge batch. I freeze the extras and they make perfect breakfasts (with some added fruit) or snacks.
  • Smoothies – Smoothies are a great way to get more some greens and fruit into your child’s diet. I share in this post a trick to make fixing smoothies quick and easy. Serve a smoothie along with some toast and you have a yummy breakfast for your kids!
  • Granola – Instead of the sugar-filled boxed cereals, you can make your own Granola to have for breakfast. This recipe makes a big batch so you can have it on hand for a quick and easy breakfast. You can add any kind of fresh fruit on top if you wish, to make it extra special.
  • Banana Bread – This is a yummy treat that can be made ahead of time and kept in the refrigerator or freezer. My favorite Banana Bread recipes is this one found on MoneySavingMom.com. I love it! Serve a couple slices of banana bread and some eggs (scrambled or hard boiled) for a yummy breakfast!

Baked Oatmeal Recipe

  • 1/2 cup butter, melted
  • 3/4 cup brown sugar (or other sugar substitute + 1/2 tsp. maple extract)
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 5 cups rolled oats

Melt butter and add to a large bowl.

Stir in all the ingredients except the milk and oats. Mix well.

Add in milk and oats and stir well.

Pour into greased 9×13-inch baking dish. (You can then cover and refrigerate overnight and bake in the morning, or bake right away.)

Bake uncovered at 350 degrees for 35 minutes.

  1. Great list! Overnight oats and baked oatmeal are among my family's favorites. I also like to fill muffin cups the night before (with Baked Muffin Cups or mufflet-type muffins) and cover with plastic wrap in the fridge, so all I have to do is pop them in the oven in the morning.
    1. I love that idea Carrie, of filling muffin cups the night before and putting in the frig. That would make a fresh breakfast so quick and easy in the morning. Thanks for sharing!
  2. I make something similar to your baked oatmeal and pour it into a greased crockpot. I found a rectangle crockpot perfect for this.An oval crockpot works too. I put it in at bedtime and it cooks on low all night. By morning it's done! We often stir in crushed, pineapple, or pumpkin, or homemade applesauce as well before putting it in the crockpot. Here's what my teens are eating mornings right now. My kids eat oatmeal but we don't eat grains. We eat everything unsweetened. We think bananas and coconut are sweet enough. :o). I have 4 teens that split this. Breakfast Cake 3 very ripe bananas mashed (or 1/2 can pumpkin, or 3/4 cup home made unsweetened apple sauce) 1/4 cup coconut oil (liquified) 3 eggs 1 tsp vanilla 1/4 cup coconut flour 1/4 cup good cocoa 1/2 tsp. baking soda 1/2 tsp sea salt Put the first 4 in a medium bowl. Mix well. Add last 4 ingredients,. Mix well. On occasion I add a 1/2 cup oatmeal for a chewy texture! Bake 350 degrees for 20 minutes. If I make it in my toaster oven I bake it at 325. Cool, slice. For special occasions shred some dark choc on top after cooled. (we use 80% cocao)
