Butter Spread

1 lb. (2 cups) butter
1 cup olive oil (mild)
1/2 tsp. sea salt
1 400 IU Vitamin E (poke with knife and squeeze oil into blender)
1 tablespoon lecithin, liquid (optional)

Blend all ingedients together in blender and put in a covered container and store in refrigerator.

  1. Hi, I love the idea of soft butter and this recipe looks great, but what is the purpose of the liquid lecithin and vitamin E? Are they using them as preservatives? Thanks for the great ideas!
    1. Hi Bonnie, I'm not sure of the purpose of the lecithin and vitamin E, except for just adding some nutritional value. Most of the time I don't use the lecithin...just the vitamin E..turns out great still. My family loves this spread and I know it is so much better for them than the soft spread at the store.
